Thanks James. Happy Thanksgiving to all.

MAs for sales tomorrow, I wouldn’t go near a store but maybe some online shopping. I need some gifts for my wife for Chanukah and her birthday in a few weeks.

I'm working today but lucky to WFH. Usually I'd be at a casino eating turkey w/mashed potatoes & gravy but I still have leftover turkey & stuffing w/gravy to eat at home which I made on Sunday, if I recall correctly.

I love Thanksgiving, for alot of reasons. Obviously for the (supposed) central focus of gratitude, which our society could always use more of... Plus, it's all about family, friends, and sharing good food. But also because it's alot harder for it to get wildly commercialized, besides "seasonal" foods at the grocery store (which is why it typically gets skipped over by advertisers, going straight from Halloween to Christmas). Lastly, and most selfishly, because I just LOVE to cook for people. I spent all day cooking a laundry list of sides for the Thanksgiving meal that I was sharing with some friends. Mac & cheese, green bean casserole, mashed potatoes, pickled daikon (I'm in Japan, after all), roasted veggies, plus 2 different types of cookies. And this year, I'm getting to spread it out for a full week! At work, we hosted a big Thanksgiving lunch last Friday, then actual Thanksgiving with friends, and now on Saturday I'm doing another Thanksgiving meal with my boss & a few co-workers (his family has been traveling this week, so they delayed the big meal).

          Happy Thanksgiving everyone!!

It’s dehydrated potato flakes. You boil water, stir in the potato, add milk and butter and salt and you’ve got pretty decent mashed potatoes. We always keep them in the house. We don’t generally have fresh potatoes as they always go bad before we use them but this way if we are in the mood we can whip up a batch of mashed potatoes any time.

I thought of an ingenious way to use instant potato flakes that probably no one knows to use it as a thickening agent such as to thicken stews, or curry, or other soups. Yes we all know to use a flour slurry or roux or in Chinese cooking cornstarch and water to thicken but I doubt anyone thought of using instant potato flakes until now when I divulged one of my many secrets, you can thank me later, lol.

Here's an example of using potato flakes to thicken Portuguese bean soup I made just a few days ago. Vegans or those who don't eat pork can omit the ham. Made with barley, potatoes, carrots, celery, garlic, onion, tomatoes, macaroni, kidney beans, bay leaves, etc. Boiled some watercress on the side. Authentic Portuguese bean soup uses ham hocks but I omitted it because it's too cumbersome to boil the ham hocks for a few hours. Some also add Portuguese sausage but I'm watching my cholesterol intake and it's too fatty for my liking. Would like to have added wild rice but couldn't find any will shopping. I might have to order it online for other soups that I make.

For some reason I've never thought of using leftover mashed potatoes that way, but I was given the same recommendation this week (I have alot of extra -- 8+ cups worth). I was already planning to make a split-pea soup out of a ham bone from last week, so the mash will work perfectly for that as well. The idea of using instant potatoes seems like a very easy option to have on-hand.

The other thing I'm loaded with is mac & cheese ... It'll take me at least a week to get through it all! lol

Regular price frozen Jennie turkey breast is $1.99/lb, today was 50% off so I bought one 7 pounder, good deal. Also, I bought one Idahoan box of instant potatoes $3.59 and Champion butter $3.49 to make mashed potatoes.

                              Thanks James.
We had the family over on Thanksgiving, then we headed to our cabin on Friday morning.
I didn't go near a store all weekend.
