  • Made a pot of soup today

    One thing that I always intend to do and just rarely actually accomplish is taking advantage of a free day to cook a batch of something that can be portioned off and frozen for later. We had nothing to do today and DW is still recovering from surgery so I decided to make a pot of soup. DW had been saying recently that she wanted some. I gave her a couple of choices and she picked chicken corn chowder. That was perfect as I had all of the ingredients in the house already.

    I used:
    3 cans of cream style corn
    milk
    1 chicken breast
    3 potatoes

    I cooked everything and it was ready for us to each have a bowl for lunch. I put the rest in containers and froze them - 6 more servings. Those are perfect for DW to heat up for lunch so she doesn't have to cook. Also great for me to take to the office.

    I do that alot too. Well Hubby is the soup maker, I will do goulash once in a while. Love the convenience.
    My retired uncle does it too. He says after all those years it is too hard to cook just for himself.

      The good thing, aside from the yummy homemade soup, is that it costs so little to make. The corn was probably $.69/can, so $2.07. I got a 5lb bag of potatoes free with a coupon the other day. About $.30 worth of milk. I don't know how much the chicken breast was - maybe $1. So the whole deal cost less than $3.50 and we'll get 8 lunches out of that or about 40 cents per meal.

        I agree I figured at one time that a weeks worth of goulash for my hubby and me = about .50 meal

          That's all that's in it?

          No spice?

          It does sound good. Adding some sausage might be a good idea too if it didn't make it greasy.

            A bit of fresh ground pepper and some dried parsley. That was all.

            No sausage here. We don't eat it.

              I usually make large batches when I cook. It takes a little more time to prepare the vegetables for a larger batch, but it's worth it. We generally eat the leftovers for lunches and dinner for the next few days, then freeze the rest.

              As much as I love to cook, getting a night or two off from the kitchen is nice too. Those few extra minutes I spend earlier in the week pay off in the end.

                I like to make chili this way. Make a big pot and freeze it individaul portions for use later.

                Actually think it's better after it's reheated that when it was fresh. Strange how some things are better on the 2nd time around.

                Yes, you should probably not eat sausage - terrible for you and can be full of nasty stuff (lips & buttholes) - but I luv it.

                  That's true of a lot of things. Given some time, like overnight in the fridge, the ingredients break down more and the flavors enhance and mingle. Definitely true of soups. Not so much for the corn soup since there are only a couple of ingredients, but definitely for something like a vegetable soup.

                        The soup was very good. Still is, actually, as there are still a few servings in the freezer. I had one last week.

                          I do that with chili, soup, sauce and a few casseroles. It's so easy to take a little container of something, micro it, and have an easy but hot meal.

                          I just had some chili that I made last week, to warm me on this absurdly cold day!

                            We make alot of pasta fogolia and potato soup.

                            But your soup sounds good, I'm going to see if DW will want some on Sunday.

                              I make a mean chicken and rice soup. DH loves it when I make it for him when he's sick.

                              A couple months ago I made a pot of Hard Rock Cafe Potato Soup - got the recipe online. Man that's good soup.
