    apple crisp:

    This makes a small batch for an 8x8 inch pan. Approximately 4 servings.4 medium size apples
    1/2 c. water 1/2 tsp. of cinnamon 1/2 tsp. of nutmeg 1/2 tsp. of ground allspice(optional) 1/2 tsp. of ground cardamon (optional) 3/4 c. of all purpose flour 1 c. brown sugar 1/2 c. butter or baking margarine.
    Peel, core and slice apples thin. Place in greased 8x8 inch square pan. Cover apples with water, cinnamon and nutmeg. Blend other ingredients until crumbly. Sprinkle over apples and bake at 350 degrees for 40-50 minutes. It is best when still a little warm and top with vanilla ice cream or cool whip topping.

      tartar sauce:

      5 tablespoons mayonnaise (or Miracle Whip), 1 teaspoon yellow mustard, 1 tablespoon sweet pickled relish, mix together

        Salsa Rice:
        Use 2 Cups leftover rice or make rice as directed. Add 1/4 C. salsa and 1/4 C. cheese.
        Variations: Add red or black beans.

          Salsa Mac N Cheese:
          Make mac n cheese, stir in salsa to taste. Changes the taste completely. YUMMY.
          Variations: Add corn, or add beans, or add chopped sauteed bell peppers.

            easy breakfast casserole:

            1/2 bag of hashbrowns that contain peppers and onions
            a handful of cubed ham
            6 eggs, well beaten

            combine all.. place in a buttered casserole pan... sprinkle lil salt, pepper and garlic...
            bake at 350 degrees for 45 minutes.. let cool 5 minutes. can be served with salsa.

              fruit bars:

              1 c. butter
              1/2 c. brown sugar
              1/2 c. sugar
              2 c flour, i use 1 cup self rising and 1 cup all purpose
              2 c. oatmeal
              1/2 tsp. baking soda
              1/2 tsp. salt
              1/2 tsp. cinnamon
              1/4 tsp. nutmeg
              1 and 1/2 c. fruit or jelly for topping
              2 T wheat germ for topping

              mix all into a dough...except fruit and wheat germ..spray a 19x13 pan. line with foil and then spray the foil. place dough on bottom of pan. just 1/2 of it.. apply fruit and wheat germ next.. then apply the remaining dough on top..try to press edges together. you can add a lil wheat germ on top and spray with cooking spray...bake 350 degrees for 35 minutes..let cool. can be stored in fridge for 1 week.. delicious.

                homemade pie crust:

                2 c. all-purpose flour, i use 1 cup all-purpose flour and 1 cup self-rising flour
                1 c. veggie shortening
                1 tsp. salt
                4 T cold water

                mix first 3 ingredients in a large bowl...use a fork and then fingers... add water and blend until dough forms.. divide dough in half and roll each out onto floured surface to make 2 pie crusts... bake 350 degrees for 15 minutes or until brown.. most of the time i just pat it into th pie plate, i don't roll it out.

                  easy omelet:

                  2-3 eggs (per serving)
                  water
                  1 thin pat of butter
                  add in-s precooked ( peppers, broccoli, ham,) use whatever you have

                  heat the frying pan, melt the butter over medium heat... wisk eggs with about 1 T water, pour into pan...tilt in pan, so eggs are distributed evenly..flip over when bottom is tested and looks browned... add fillings and fold.. flip after browned on bottom...

                    easy crock pot chicken stock:

                    any kind of chicken pieces
                    1 chicken bouillion cube
                    2 large celery stalks
                    2 whole carrots
                    2 large onions
                    2 garlic cloves
                    1 bay leaf
                    fill crock pot with water to to cover ingredients... cook on high for 4 hours.. add water if you use alot of chicken pieces...strain liquid and eat the ingredients.. freeze chicken stock in individual containers.

                      Classic Tuna Casserole

                      1 envelope chicken noodle soup mix
                      2 1/2 cups boiling water
                      3 tablespoons butter
                      3 tablespoons flour
                      1 can tuna
                      2 cups canned peas, drained
                      1/4 cup buttered bread crumbs
                      Pepper

                      Preheat oven to 450 degrees. In a small saucepan, combine soup mix and water; heat to boiling. In another saucepan, melt butter over low heat and blend in flour and pepper. Gradually stir in hot soup and cook until thickened. Add tuna and fold in peas. Pour into a greased baking dish and top with bread crumbs. Bake for about 15 minutes, until heated through.

                        Baked Chicken Wings

                        1/2 c. margarine, melted
                        1 t. dijon mustard
                        3 c. multi-grain flaked cereal
                        16-18 chicken wings, broken into two pieces
                        1/2 c. grated Parmesan cheese
                        4 t. finely chopped parsley

                        Preheat oven to 350 degrees. In glass pie plate, combine melted margarine and mustard. In medium bowl, combine cereal crumbs, Parmesan cheese and parsley. Spoon onto waxed paper. Roll chicken pieces in margarine mixture, then in cereal mixture to coat completely. Place on rack in baking pan; drizzle with remaining margarine mixture. Bake 35-40 min., or until golden brown.

                          Italian Spaghetti

                          1 onion, chopped
                          2 tbsp. vegetable oil
                          1 lb. ground beef
                          1 tsp. salt
                          1/4 tsp. pepper
                          Dash of red pepper
                          1/2 tsp. chili powder
                          1/2 tsp. tabasco sauce
                          1 can cream of mushroom soup
                          1 can condensed tomato soup
                          1 (8 oz.) package spaghetti
                          1/2 c. grated Parmesan cheese

                          Brown onion in oil. Add meat and seasonings. Brown lightly, cover. Simmer 10 minutes. Add soups, cover and simmer 45 minutes. Cook spaghetti. Cover with sauce and Parmesan cheese.

                            We make a recipe along these lines; dip the chicken in mayonnaise thinned with milk, then dip in crushed potato chips, any flavor. Bake until done. I like to serve mine with onion dip on the side!

                              cafe vienna:

                              1/2 cup instant coffee ( i use leftover coffee)
                              2/3 tsp. cinnamon
                              2/3 cup sugar
                              1 tsp. dried orange peel
                              2/3 cup nonfat dry milk (optional) if you like it creamier

                              Stir ingredients together. Process in a blender until powdered. Makes 1 1/3 cups mix.


                              Use 2 teaspoons to 1 cup of hot water.... enjoy!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! !!!!!!!!!!!!

                                easy egg salad:

                                6 hard boiled eggs, chopped 1 small onion, chopped,
                                1/2 cup mayonnaise or 1 tsp. onion powder
                                or salad dressing ¼ tsp. salt
                                1 small stalk celery, chopped ¼ tsp. pepper

                                Mix all ingredients. Best if chilled 2 hours. Makes 4 sandwiches. maybe six if you stretch it.
