Homemade hashbrowns, Twice baked potatoes (can even be frozen after you have finished cooking them), french fries, homemade potato bread, potato chowder, cheesy hashbrown casserole, etc.
There are lots of things you can make, but if you need recipes, go to allrecipes.com, go to the ingredient search, type in potatoes and see what comes up.

It's great weather for some potato chowder. Scalloped potatoes are also good - add a little ham or hot dogs for a main dish. I love recipezaar.com, if you want to browse for ideas.

You can slice them thin (think lasagna noodle thickness) and use them instead of lasagna noodles (vegans do that for lasagna).
There is also a recipe where you slice up the potatoes. You layer them in a dutch oven or something that can go in the oven. You put in a thin layer of salsa in the bottom, a layer of potatoes, a layer of taco meat or refried bean dollops, a thin layer of salsa, and sprinkling of cheese, and you continue to layer like that until your pan is full. When it is full, you throw it in the oven. When it is almost finished baking, you sprinkle a layer of cheese over the top and throw it back in the oven and let the cheese melt. I can't remember how long you bake it or at what temp. I haven't tried it yet, but it sounds yummy, especially with a huge dollop of sour cream on top.

Did anyone say potato pancakes? Can be a side dish or a main dish.
Grate the potato into a beaten egg with about 2 TBs flour. Proportions aren't terribly important. Ladle them onto a hot frying pan, forming them about 4 inches in diameter.
Good with onion in them, and green onions served on top. Better served savory than sweet, though could go either way.
I may be weird, but I also like potato pancakes served cold, so leftovers are good.
