Take out the 30 year loan. You can make extra payments any time but if you ever get strapped for cash you'll need the relief a 30 year note will provide.
Did you have an AMEX card in the UK? You should be able to get one here if you did.
Are you on Creditboards.com or creditinfocenter.com? I seem to recall similiar questions for someone in your shoes and establishing credit in the US.
