    Okay, I'll give the dried beans another try (definitely more economical). . .last time they came out crunchy.

    I"m going to make the lentil recipe again, this time with some salt and a bit more spice to give a bit of oomph I felt it was lacking.

    Here's another fairly economical recipe, since you can get a big bag of sweet potatoes for $3.00



    I ate this and the first bite it was like, "I don't like this. I never had anything like this." Then I took a second bite and was like, "Okay, I could see how people could like this."

    By the 10th gulp, I'm gulping it down, lol.

    I guess American palates are ruined.

      My favorite is a lentil recipe, posted in the recipe section here.

      I like it on top of ditalini, but others have used it as a base and added carrots, greens, and even Indian spices.

      Pros: Easy to make, very inexpensive, freezes well, tastes great, vegetarian/vegan, very healthy, convenient for a quick meal.

      Cons: Takes a few hours to make (simmers a lot), looks like mud!

        I try to avoid carbs. . .does that lentil recipe work okay as a standalone?
