    DAIRY TIPS

    This is one topic that is getting a lot of attention. Some experts say it is good for you. Others say it isn’t.
    Some say dairy is a mucous- maker, and a contributor to skin problems, as well as high in fats. Others say it is a health food.
    What can not be denied is, that calcium builds strong bones and teeth.
    Dairy does not include butter, cream, or margarine. These are the fat and sugar category.The dairy category includes yogurt, cheese, and milk.
    More calcium rich foods but non –dairy, include dark green leafy vegetables, soy milk, and sesame seeds.
    A lack of calcium can lead to brittle bones in old age.
    Be sure children and teenagers get enough calcium in their bones. Their still growing.
    Do use the lower fattier versions. They’ll still contain the same high- calcium content as their fatter counterparts.
    If you need to eat the high fat cheese, then eat it in moderation.

    Dark Chocolate Tips
    Consume only quality organic dark chocolate. None with a high sugar content, that has very little cocoa. Go for 55- 70 percent cocoa.
    This is real heart protection, and long life.
    Nothing boosts your brain’s levels any better like dark chocolate.
    It’s packed with heart protecting, and cancer fighting antioxidants
    It has also been known to lower LDL cholesterol by 8 percent, and raise HDL cholesterol by 4 percent.

      Doughnut Tips
      A triple killer. Besides being one of the worst killers, after consumption it feels like a rock in your stomach for days.
      Their guaranteed to be a quick, and cheap tasting death call, to heart disease, cancer, obesity, diabetes, and very early death.
      The average doughnut has more than 300 calories, 17 grams of fat, and 33 grams of carbs, half of them sugar.
      I think I’d want to find a substitute.

        Doc's Exercise Tips
        Stop complaining about not having, enough time to exercise.. Make time.
        I hear this a lot in my office. I just want to toss people out on their ears, and tell them to get moving. Nothing irks me more. You find time for other things don’t you? Well you need to work this into a daily schedule as well.
        I’m serious people. If you work than exercise for 15 minutes during your lunch hour. Or put a mini trampoline in your office and bounce while on the phone. Run up and down the stairs for five minutes twice a day. If you ride the bus than get off one stop before yours.
        Some people say I have no energy, or no place to exercise. These are excuses people that I don’t go for. All you need is a three foot square and you can exercise.
        You can run in place without going anywhere.
        Just make a pledge that you’re going to exercise faithfully for one month. After that you will see how much easier it gets.
        If you live in the city, hit the sidewalks. If you live in the country, hit the trails.
        If you will exercise you will find the energy. So grit your teeth and move it out.
        You don’t need any fancy spas. Check with schools, and colleges for fitness programs. These are usually $ 10.00 a week if you can afford them.
        You can even rent DVD’s to exercise with.
        The point is just exercise.
        You will need a good pair of walking shoes.
        For people feeling depressed exercise is the best cure. It’s better than any prescription.

          Fiber Tips
          Fiber has a huge impact on your health. It helps prevent bowel cancer, reduces stomach acid, and lowers the amount of cholesterol in your blood.
          Some scientists believe that certain foods contain toxins and chemicals that may induce cancerous changes in the colon lining. It is thought that speeding the passage of food through the intestine, fiber reduces the time during which these chemicals can have this effect. A diet rich in fiber will also promote healthy bowel function.
          Foods rich in fiber include whole wheats brown rice, grains,
          fruit and vegetables.
          However if your stomach is not used to fiber, there can be a lot of bloating and excess
          gas.
          The key here is to introduce fiber rich foods into your diet slowly. Let your digestive system get used to them. You may have to drink more water as the fiber absorbs liquid.
          Two types of fiber include Soluble and Insoluble. Soluble include oats, beans, and barley. These are thought to lower blood cholesterol.
          Insoluble found in whole – wheat cereals, rice, and many fruits and vegetables, promotes bowel function to ward against bowel cancer.

            A powerful antioxidant, proven in numerous studies to force cells to commit suicide. Green tea keeps cells strong and young. It can also increase your metabolism, which makes it a great tool for weight loss.
            Green tea is the best, but black and white teas are good also. Just processed different.

              Handy Car Tips
              Car Explosion
              Never clean the battery terminals with water, the battery could short out and explode.
              Now you can use a can of carbonated beverage, especially the ones that are carbonated using phosphoric acid . They will dissolve metal oxides that cake on the battery terminals.
              Or you can use a metal brush , and some baking soda. Sprinkle it on to neutralize the acid.
              Your Car Won’t Start Because It’s Cold.
              People say oh my battery must be dead. No most of the time the problem is the oil.
              Those cold temperatures seem to turn your oil into a thick syrup. This makes the battery work harder to turn the engine over.
              You may want to consider a heated blanket to keep the motor oil from becoming a semi- solid.
              Don’t Be fooled
              Car polishes do not provide any protection, they only keep the wax clean.
              Kitty Help
              In the winter time you may want to keep ,a bag of kitty liter in your truck. Comes in handy when stuck.
              No Nipping
              If your windshield wipers are smearing the windows, just wipe them with rubbing alcohol.
              Get Back On solid Ground
              Get stuck in snow use a blanket or a car floor mat for traction. Just keep both in your car.
              Chilly
              If you run your air – conditioner for 4 – 6 minutes during the winter, it will keep the seals in good shape for the summer.
              Where’s That Hair Dryer
              A hairdryer will defrost your automobile locks in the winter.
              Protect It
              A lid from a 1 lb coffee can will fit an opened can of motor oil. It will also stop any contamination from debris or dust from entering it.

                Health Facts
                We don’t eat the optimal diet that is needed. Our soils have become so depleted that plants, can’t extract all the vital minerals they once did.
                Several studies show that diet alone cannot give you, the blood levels of many essential nutrients, you need to prevent diseases much less cure them.
                Every one needs a multi- vitamin / mineral /antioxidant formula. That includes every man , woman, and child.
                We just aren’t getting the nutrition we need from our food.
                I will send the doc’s list of what he recommends some time this week. Get your friends to check these out as well.

                  Meat Tips
                  Hot Dogs
                  One of the worst sources of protein. They have less protein in a 3 ˝ oz serving, than any other type of meat. They can contain up to 56 % water, and 3% powdered bone. Sugar is a very popular ingredient in hot dogs. Sometimes labeled corn syrup.
                  Meat Hunt
                  When purchasing a chuck roast, look for the white cartilage near the top of the roast.
                  If you can find a roast with this showing, then you have got the first cut which will be most tender.
                  Now if looking for an eye of the round, look for one that is the same size on either end. This is the most tender.
                  Now if looking for round steaks, pick the ones that have uneven cuts. Now you have found the one next to the sirloin.
                  Meat Fact
                  Tomatoes and tomato sauce will act as a natural tenderizer for all types of beef.
                  Aging
                  Meats could turn a grayish color if cooked in a pot with insufficient room.
                  Overcrowding tends to generate excess steam. So give them room to breathe.
                  Coloring
                  Beef should be a bright red – color from the muscle pigment. The darker the red color, the older the cow. Beef fat should be white, not yellow.
                  No Stick
                  Place stalks of celery under your beef, and it will never stick to the pan.
                  Too Many
                  The U.S. consumes more hot dogs than the rest of the world. Almost 2 million hot dogs a year. This is almost enough to circle the globe.
                  Keep Warm
                  When boiling hot dogs you can use,the top of a double boiler to keep buns warm.
                  Much Less
                  Purchase meats that are boneless. They will cost less. Bone weight contributes considerably to the cost.
                  Hamburgers In A Hurry
                  Poke the burgers a few times with a fork, so the heat can enter more easily.
                  Thin
                  If you want thin slices of beef for sandwiches, and the roast is soft, just place it in the freezer for a few minutes. Then slice it.
                  Veal
                  Is lower in cholesterol than beef. It contains 1/ 10 the fat of lean beef. It’s tender and comes from young milk – fed calves.
                  Game
                  Game meats dry out fast. So do not overcook. You can use a small can of ginger- ale to cook these in, than you won’t have a gamy flavor.
                  Meatloaf Cracking
                  If you rub the top and sides with water it won’t crack as it cooks. Then add your tomato sauce 15 minutes before fully cooked.

                  Oucha
                  If your burn or scorch your roast, remove it from the pan. Now cover with a hot water dampened towel for 5 minutes. This will stop the cooking. Last remove the burnt parts with a sharp knife, and continue cooking. Watch it close or you can repeat the above.

                    Meat Tips Con’d
                    BBQ
                    When you are barbecuing a 1 lb steak remember that you may be ingesting the equivalent to cancer – forming agents ( carcinogens ) that would be found in 15 cigarettes. This problem exists, if there is sufficient fat dripping on the real charcoal briquettes, which cause a chemical reaction to take place, that coats the meats with pyrobenzines.
                    Wrapping the meat in foil will alleviate this problem.
                    USDA
                    They have published information stating 1 in every 1,000 pigs are now found to contain the Trichinosis parasite. Recommendation is still to cook pork to an internal temperature of 160 degrees F. ( 71degress C.) The parasite is killed at ( 137 degrees F. ( 58 degrees C.)
                    Bacon
                    This is highly nitrated. So you need to find the leanest bacon you can find. It can be prepared on a paper towel in the microwave, or under the broiler where the fat drips down. Even the substitutes will contain nitrates. .When shopping see if you can find a nitrate free product.
                    Meats In Love
                    Meat loves pineapple, kiwi, and papaya for tenderizing.
                    No Refreeze
                    Do not refreeze meat. But leftover cooked meat can, stay in the refrigerator safely for 4- 5 days.
                    Speeding
                    When you grind up meats, it speeds up the loss of Vital nutrients. Gets too much air and light. Then meat can go bad in a short amount of time.
                    Buyerware
                    When purchasing a lamb shank, be sure it weighs at least 4 lbs, any smaller and it will contain too high a percentage of bone, and less meat.
                    Improve Taste
                    When you purchase hamburger with low – fat add a package of onion soup mix. This will improve the flavor.
                    Glued
                    If your going to purchase a canned ham, purchase the largest you can afford. Smaller canned hams are usually made from, bits and pieces and glued together with gelatin.
                    Bloody Myth
                    Rare steak is not really bloody. The blood in meats is drained at the slaughterhouse, and hardly any remains in the meats. The pigment call Myoglobin is found in the muscles not in the arteries. This Myoglobin gives meats their red color. Blood obtains its color from hemoglobin Now beef will have more of a red – color than pork, since it contains more Myoglobin.
                    Thawing
                    Remove meat from freezer. Then thaw it out in the refrigerator. Placing it the microwave to thaw just causes a loss of flavor, and possibly a dried out piece of meat after cooked.
                    Rapid thaw could cause a loss of excessive juices, which gives the meat flavor as well.
                    Roasting
                    Let your roast rest until it comes to room temperature, after removing from freezer. It will cook more quickly, than one placed directly into the oven. This will also keep the roast from drying out, before the inside is cooked.
                    Beware Of Liver
                    This should be eaten once a week or less. Liver may concentrate toxins into it’s cells. These may include heavy metals and pesticides. Depends on the animal’s diet. Liver is extremely high in cholesterol, more than any beef product.
                    Meat Bones
                    People make the mistake of putting the bone in boiling water. This only reduces the flavor and nutrients. The bone needs to be placed in cold water, when first placed on the stove. This will then release the maximum of flavor and nutrients.
                    Carving
                    Do not carve a roast for 15 minutes. Let it rest. This will allow you to cut thinner slices, and the roast to firm up a little.
                    No shelf
                    Hams placed on a shelf for purchasing tend to lose flavor, texture, and nutrients. These hams are sterilized to retard bacteria, for longer periods of time. Best to purchase one under refrigeration.
                    Pigs Play
                    Pigs have been given footballs to play with in the past and now. This has prevented them from, chewing on each others ears and tails. Pigs have a tendency of pestering each other all day. The pigs enjoy the balls and are gaining weight faster.
                    Wrap Me
                    Chops, cutlets, and hamburger should be freezer wrapped individually. This assures maximum freshness.
                    Proud Hunter
                    How many times have you seen a deer tied to a bumper of a vehicle. Well that hunter was pretty proud of his catch. Truth is he destroyed it before he got it home. The heat from the car engine, can cause bacterial growth, and spoil the kill before he gets it home.
                    Those proud hunters need to bled, clean, gut, and even cool if possible, before placing the kill on top of the car, and then cover.
                    No Salt
                    Do not salt meat before cooking. The salt draws the liquid out of the meat. Salt does not work its way into the meat, unless it’s punctured. This is not recommended. You can season your meat just before serving. Pepper is not recommended either. It can become bitter if scorched, when using a dry heat.

                      Meats are composed of the following
                      Beef - 60% water 18 % protein 22% fat
                      Pork - 42 % water 14 % protein 45% fat
                      Turkey - 58% water 20 % protein 20 % fat
                      Chicken - 65 % water 30 % protein 6 % fat
                      Fish – 70 % water 20 % protein 9 % fat
                      Lamb - 56 % water 16 % protein 28 % fat
                      Never baste food with the marinade the food was in. Bacteria from the food may contaminate the cooking food , and then the food may not cook long enough to kill the new bacteria.
                      Make sure the food placed in the marinade is fully covered and refrigerated.
                      Marinade times under refrigeration.
                      Fish is 20 to 40 minutes.
                      Poultry is 3 – 4 hours.
                      Meat is 1-2 days.
                      Steak should be served on a warm plate. When meat cools on your plate, it gets tougher.
                      After carving a roast it should be placed back in the oven with the door ajar.
                      Wash your hands after handling raw meat. Especially chicken
                      When cooked beef is refrigerated, the flavor changes. After just a few hours the fat which is the main flavor, tends to produce an off flavor. This is caused by the heating process.
                      You can try and slow this process down by avoiding iron, and aluminum pans. Do not salt meats until ready to serve. This will help also. If you use onions they can slow it down also.
                      When having a party here are some calculations you can follow.
                      Beef and servings per person:
                      Chuck roast and rib roast - ˝ lb
                      Hamburger - Ľ lb
                      Pot Roast - Ľ lb
                      Ribs - 1lb
                      Round beef roast - Ľ lb
                      Round steak - ˝ lb
                      Sliced lunch meats - Ľ lb
                      Steaks without bones - 7 oz
                      Steaks with bones – 12 oz
                      Stew meat – Ľ lb
                      Tenderloin ˝ lb
                      Was This A Happy Cow
                      The state of the cow before slaughtering, will depend on the storage life of the meat. Many slaughter houses try to play soothing music for the cows before death. This helps relax them so they don’t get, all tensed up and stressed out. When a cow is afraid the body gears up for a fight. Then it starts to convert carbs into glucose for quick energy.
                      This provides the cow with great strength, but the excess glucose shortens the life of the meat.
                      Bacon
                      Bacon will only stay fresh for one week un refrigeration, once opened and exposed to air.
                      Let your bacon sit for 20 - 30 mins at room temperature before cooking , and it will separate more easily.
                      Pork Roast
                      When cooking a pork loin roast place the fat side down for 20 minutes. This will cause the fat to release it’s juices, then turn it over for the rest of the cooking time.
                      Chicken
                      When you purchase a 3 lb chicken, you will end up with 1 ˝ lbs of edible meat.
                      When a chicken is labeled fresh, ask the butcher if it was once frozen. If so do not refreeze.
                      Three chicken wings total will yield 25 grams of fat.
                      Turkey
                      Forget the stuffing bags to be placed, inside the turkey before the stuffing. Just use cheese cloth. Cheaper.
                      Let turkey rest 20 minutes before carving. Then the meat won’t fall apart.
                      Never stuff a turkey or chicken and leave in all night in the refrigerator. This is a good way for rapid bacterial growth to start. Then when cooked all the bacteria may not be killed. This results in hundreds of food poisoning cases annually.

                        Tips for drinking:

                        Buy your booze at one of those big outlet stores - don't drink before you drive all the way out there. Corner liquor stores can be pricey.

                        Always pour your booze in a glass. Hooching off the bottle is not classy - epecially if it's still in the paper bag.

                        If you must mix your booze with something, try ice. You get the side benefit of a cooler drink.

                          More drinkin' tips:

                          Never drink alone - round up a couple respectable friends - gambling buddies, hookers, preacher, banker -people you wouldn't mind being seen with.

                          Nothing goes better with drinking than emotional problems. Feeling sad, angry, lonely? Sounds like time for a drink!

                          Once you're tanked up, there is no better time to play with fireworks or handguns! These activities require a steady nerve.
