Either way. If honey is kept in an airtight container, it will keep indefinitely, even for centuries. It has been found in Egyptian tombs. If it crystallizes, just put the jar in warm water or microwave it to make it liquid again.

      Aleta,

Into every life a little toxin must fall.--JJoan.of.the.Arch

Many things we eat have toxic elements too them. The Ames test, a test which attempts to quantify the carcinogenicity of substances by relates their mutagen effects on bacteria colonies, points to Basil as possibly among the most carcinogenic of foods we eat. Yet Mr. Ames himself says there is no way he is going to give up Italian cookery.

I wouldn't worry over a small crumble of a bay leaf.

I agree, Steve, about freezing flour. Sure wish I had frozen the bag of pasta that first introduced grain moths to my kitchen. It took me years to completely get rid of them. My sister who lives in a southern state with no winters to reduce the insect population stores all kinds of well-sealed things in her freezer. Four, pasta, boxed mixes, dry beans and peas, even new bags of chips....But if you were a serious bulk buyer you might need a walk-in freezer to do that, and the price for storing your food would have to be accounted.

Joan of the Arc: That's what I was thinking about when you buy items in bulk. (The room for it). I just bought another 10 lbs of rice after what I heard. I don't think from what they say that we're going to have a shortage ( for the US) but it definitely will go up in price. Also, basil is one of my favorites - don't tell me that.

Steve: Thank you so much for that information because I have had a concern about the problem with the bee population being low and I wanted to buy honey but was concerned about it going bad. Thank you.
