This is your mother speaking. Well, this is somebody's mother speaking and you know we we all have an agreement amongst us to say this:
Please eat some vegetables, too.
Go to the store once in a while for some vegetables. You can warm canned things in a bowl in your microwave, or you can mix them into other dishes. You can also cook fresh vegs in the micro. Some vegs can be eaten without cooking. Tomatoes and carrots, for example. Even in the produce department there are sales.
If you were my kid I'd send you a care package full of broccoli, spinach, kale, and kohlrabi."There is some ontological doubt as to whether it may even be possible in principle to nail down these things in the universe we're given to study." --text msg from my kid

This is another mother speaking. Eat veggies/fruit EVERY day. It is so important to your health (plus your brain works better when you feed it properly). Fresh fruit isn't too expensive when you buy what's in season. Canned/frozen/fresh veggies - buy whatever you can afford. They are all good (but watch the sodium in canned veggies). If you must do the mac n cheese thing just toss in a can of peas and carrots or something.

I don't know if you have a freezer part in your microfridge but I just came across tyson's popcorn chicken. They're frozen but already cooked and it says on the bag that they can cook in the microwave. It was a 3 lb bag and they're small pieces....so for one person they can go a long way. They taste good too

how about the occassional pot pies? i signed up at congra foods and get coupons in the mail sometimes. Here wally just had a sale on tv dinners also. Quick simple and cheap. Not something to eat every day, but for 1.00 or less a meal, i think is a good deal and you have lots of choices to chose from.

Lux, about the multi-vitamin, I would actually recommend not taking them unless your have a specific reason. Studies have shown that multivitamins have no benefit when taken by the general public. They are unregulated so you don't really know how much of what they say is in them are actually there and that can cause serious damage to your body if you end up taking too many fat soluble vitamins.
As to quick food, when you take a trip to your local supermarket take a look at what fish is on sale. Fish steams quite well in the microwave, just put in some lemon juice and basil or oregano. Also you can make yourself some dill sauce, which is mainly ground dill and mayonnaise. Generally some sort of cod, scrod, tilapia or some other white fish will be relatively inexpensive. Usually about half a pound of fish is a serving. As for vegetables, just buy the frozen ones in the bag, then you can just make them in the microwave.
