  • Sleepy Mom Recipes

I have three kids, 6,5, and 2 . I have been forced to learn to do things quickly and do them well, and more than one at a time. CAN I GET A WITNESS?

Here are some of the recipes I have concocted along the way.

    Feeds 5 people
    Prep time: 20 minutes

3 boxes Velveeta Shells & Cheese
2- 6 oz. cans of tuna
    Ritz crackers
    1/4 cup milk
    black pepper (to taste)
seasoned or white salt (to taste)

*Optional Ingredients: jalapeno peppers, bell peppers, celery, pimentos

Cook 3 boxes of Shells & Cheese as directed. Drain and add cheese, tuna, black pepper, and salt. *If adding optional ingredients, saute them first in a little oil or butter for 3-5 mins. Add 1/4 cup milk to the shells and tuna slowly while stirring. Serve with Ritz crackers on the side or crush them over the dish after serving. I don't recomment adding crackers to the entire pot of food because they become soggy.

    My kids LOVE this!!

The good thing is you can dress it up with herbs and make it look all fancy-shmancy!

Hungry + Tired = Cereal for dinner

Why not? It's your house, right?

A good lunch or dinner side

2-- 29 oz. cans of green beans (cut or french style)
        1/4 cup chopped onion
        salt and pepper (to taste)
1 cup chopped Polska Keilbasa sausage (optional)
2 tbsp. butter or margarine (none if you add sausage)

Combine green beans, salt & pepper, chopped onion, and butter in a saucepan. Cook over medium heat stirring occasionally for 10 minutes. Cook sausage in a separate pan with light oil over high heat until brown. Add sausage to the green beans and enjoy!

Note: If you add sausage to the dish, you don't need the butter. You CAN use both if you like, but it will be very rich in cholesterol after that.

Too funny! Hubby used to get mad when I'd do that (I try to keep Cheerios or at least something non-chocolate on hand), but I explained that's it's better for them than alot of things.

Last nights dinner was a '30 minutes till dinner what on earth can I throw together?', turned out VERY good.

put leftover turkey in a pot of water (enough to boil the pasta in) (betcha any meat works)
add one beef bulion, two chicken then add
onion powder, pepper, some terragon, whatever else DS thought of

then remember you might need turkey sandwhiches for lunch sunday, take out some turkey and put on bread with mustard, pack up in the fridge .

Then add pasta (I have found that egg noodles and spirals absorb the flavor better)

Nuke some veggetables (kids pick of course) add to bowls with the err other stuff. (or put the veggies in the pot if you don't mind them softer - I hate mushy veggies though)

I bet this is how the best dishes come about.

Someone's mom threw some stuff together and it was a hit!

pressure cooker can turn a 2 hour meal into a 40 minute meal, pot roast, beef and noodles
chicken and noodles, pulled bbq pork sandwiches, veggie soup, grean beans with ham and onions, spareribs, bbq chicken ect, the list goes on and on almost anything you have can be cooked in a pressure cooker in no time and remember our old friend the crock pot comes in handy when you have a very busy day also and if hubby conplains tell him to cook it the next time
