The Classic: Chicken soup with barley, chicken, stock, celery, carrots, onions

Pea Soup: Parsnips add a gentle carroty flavor; also leeks

Salmon corn chowder: Very yummy with sliced zucchini, creamed corn

Lamb stew: among my top 3 favorites

I also make a Beef/Veg and a Chicken/Veg for DH to take to work as they are both low carb so good for his diet. Also a Cauliflower and Bacon Soup which is also low carb.

        Re: Homemade soups

We love soup at our house, using old recipes and trying out new ones.

Some of our favorites are 16-bean soup, split pea soup, taco soup, and minestrone.

We love stews and chilis too. Cheap, yummy meals in a bowl - can't get much better!

Would you be willing to share the cauliflower and bacon soup recipe? I also follow a low-carb diet and would love to make it -
          Thanks!

Wow you guys are making me hungry! I think I need to try to make more soup. The only one I make now regularly is veggie chili in the crockpot.

              Re: Homemade soups

I will post the "full carb" recipe in case anyone else is interested. To make it "low carb" I just omit the potatoes.

              Cauliflower Bacon Soup

              2 tbs oil or butter
              2 small onions, chopped
              250g bacon, chopped
              3-4 small potatoes, chopped
1 cauliflower, cut up into florets
              4-5 cups vegetable stock
              230 ml cream

Heat the oil/butter in a large saucepan. Add the onion and bacon and fry a couple of mins until soft. Throw in cauli and potatoes with stock and bring to boil. Cover, reduce heat and simmer about 15 mins until veges are soft. Puree soup in blender or food processor (may have to be done in batches), then return to pan and stir in cream. Rheat gently and season with salt and pepper to taste. Eat and Enjoy

Check out your local library for soup and crockpot cookbooks. I just checked out several and found some nice recipes. My favorites were A Beautiful Bowl of Soup: the best vegetarian recipes by Paulette Mitchell and Fresh from the Vegetarian Slow Cooker by Robin Robertson.

Vegetable soup is so tasty if cooked the right way and served with fresh parcley and bread crutons.

                    Re: Homemade soups

My household votes for my split pea with ham as their favorite here..........with potato soup coming in a close 2nd. They don't know the potato has leek in it too.......
To add a special treat, depending on supplies in the fridge, we like to make baked potato soup...........which, done our way, is just the regular soup, with baked potato toppings on the bowl. Sour cream, bacon crumbled up and fresh chives out of the garden! Yummy.

Time to put the kettle on with something simmering! Soup is such a great meal here........add a bread of some sort and a dish of our home canned fruit and we're done!
I always make my BIG kettle full of soup & then freeze it in zip locks, using different sizes, as my household size varies between week nights and week ends.
I'm so grateful for my big freezer!!! I've never had to do without one, thank goodness!

we have eaten soup and bread once a week this winter.. i find if i add leftovers and change the texture, we eat it more.. i blenderize the leftovers and add them into the newly cooked veggies, especially in the veggie and chili recipes.

someone posted onion soup. whats in it? heard it was good, but have never tried it. in the summer, our onions are usually by the bucketfull-sounds like a way to use some up.
