salmon cakes- any "fish cake" recipe- just change egg to egg white- I add colored peppers & Old Bay seasoning- baked not fried
Use the same mixture for salmon loaf
salmon salad- no fat mayo/no fat sourcream dressing
fish chowder- use cream of shrimp soup as a base, add canned salmon, corn, colored peppers, cooked diced potatoes, sliced mushrooms, brocoli, and old bay. Heat gently-could also add some shrimp if you can have a little cholesterol.
we love any fish- canned or fresh
an easy way to use leftovers for salmon cakes: use leftover mashed potatoes as your base, add in salmon and whatever seasoning you prefer, and bake or fry as normal.
I, too, was looking for a salmon recipe. They have a bunch at chickenofthesea.com that I saw. Haven't gone through them all or used any yet, but you might find something that you like there.
I also make fried patties with canned fish, either mackerel or salmon. But instead of the bread crumbs most recipes call for, I use ground flaxseed. Other than that the main ingredients are egg, onion, and lemon juice. Heavy on the lemon juice. You can get by with quite a few different spices. Salmon can support some flavors!
I like the idea to grill them, because I hate the mess of frying. Maybe I'll try grilling some when warm weather sets in.
Now, as long as we're talking fish, do you want my recipe for caviar?

Crumble the salmon into a 1 quart bowl, removing any bones or skin.
In a small bowl combine the mayonnaise, yogurt, celery, capers and pepper. Mix well and then add to salmon and toss. Serve on a bed of lettuce leaves.
