  • Wheat crackers (like Wheat Thins)

    Recipe from the Tightwad Gazette, originally from Yankee magazine. I have not made these yet, so I cannot attest to how close they are to Wheat Thins.
    3 c. uncooked oatmeal
    2 c. unbleached flour
    1 c. wheat germ
    3 T. sugar
    1 t. salt
    3/4 c. oil
    1 c. water
    Mix ingredients and roll out on two cookie sheets. Sprinkle with salt and lightly roll again to press salt in. Cut into squares or diamonds (a pizza cutter works well). Bake at 350. After 20 minutes, begin checking. The outer ones are usually ready first. Remove crackers as they turn golden brown and hard.

    Here is the second wheat cracker recipe from TG (I have not tried this one yet either):
    (TG Gazette comments: This recipe is similar to a recipe I published a few years ago [I assume the above recipe], except it's less crumbly. It requires 35 minutes of preparation time and makes 20 ounces for about $.88."
    1 1/2 c. whole-wheat flour
    1 1/2 c. white flour
    1/4 c. sugar
    1 t. salt
    1/2 t. baking soda
    1/2 c. margarine
    3/4 c. buttermilk
    1/4 c. wheat germ

    Sift the first five ingredients together. Add the margarine and process in food processor. Add the buttermilk and process until it forms a ball. Set it aside for 10 minutes. Cut the dough into four parts. Grease cookie sheets and sprinkle them with wheat germ. Roll each dough piece out on a cookie sheet. Sprinkle with salt. Cut into diamond shapes with a pastry wheel. Bake at 350 degrees for 20 to 25 minutes. Cool and put into a covered container.

      A later entry in the TG suggests using a comb to "dot" the crackers and break them apart when done.
      Other suggestions: sprinkle with onion or garlic powder, powdered cheese from a box of mac & cheese, or sugar and cinnamon.

        What is the yeild on them VS the cost of the ingredients?

        Aldi has their own version of Wheat Thins for .99 a box.
