Is it even possible to reheat leftovers with meat in it without the meat getting overcooked and really dry? This seems to be a problem whether I freeze it or just refrigerate it, and even if it's in something really saucey like a stew. Drives me nuts because I don't really want to eat it later, so sometimes it just sits and doesn't get eaten. Overcooked meat it just really unpleasant to eat. It's super dry, rubbery, no flavor. I don't have the same problem with tofu, but my husband isn't a fan and he's supposed to get as much of his protein from lean meat as he can due to his medical condition. We mainly cook chicken breast, but occasionally fish and shrimp. I would certainly do more cooking ahead of time if I could solve this issue.

You can certainly reheat meat. I think the key is to microwave it at a lower temp for a longer time rather than high temp for less time. And do short bursts, like 30 seconds each, and check it and stir it each time. You just need to experiment. You also need to add liquid - it can just be a little water - and cover the food (one of those plastic microwave covers is perfect).
I'm not really sure about fish as we never have fish in our home (DW is allergic).Steve
