    Moist Banana Cream Pudding Muffins
    Ingredients:
    1/2 c. soft butter (one stick butter)
    2 eggs
    ½ c. milk
    3 ripe bananas
    2 c. bread flour
    1 package Jell-O Banana Cream Pudding Mix (5 minute kind) 3.4 oz box
    1/2 t. salt
    1 t. baking soda
    1 c. brown sugar
    Directions:
    • Preheated 350-degree oven.
    • Cream brown sugar and butter together.
    • Add eggs and bananas to above and mix well.
    • Add to flour, pudding, salt, baking soda with above alternately with ¼-cup milk, at a time.
    • This will yield a very thick batter.
    • Makes 13 muffins bakes about 24 minutes (oven temperatures vary) the tops will be golden brown and are done with a toothpick inserted in the middle comes out clean.
    • Butter tops with margarine or butter after finished baking. Excellent and moist!

    Momtwo, I added this for you because I didn't know how to send a personal reply to you. And I thought others might like it. It says it make 13, but I only made 12. The batter is pretty thick & the muffin tins held it nicely. The muffins were just a little larger. Besides, who has a muffin tin that hold 13 muffins!

    PS I have a kitchen aid, so all I did with cream the sugar & butter, added the eggs & bananas, added the milk, & then added the dry ingredients. Worked just fine. I also mixed all the dry ingredients together before adding it to the wet ingredients.

      This looks great. I'm in a vegetable/fruit co-op and we just got a ton of bananas. I think I'll try these!
