Most recipes I'm finding online for baba ganoush are saying to roast the eggplant. If I microwave it, will the taste or texture be disappointing?
Also, I do not have the oft recommended food processor in which to smooth it. Any tips on doing it by hand? I don't have a food ricer, either.
