French Onion Soup...I can get a 10 pound bag of onions for $3.19 (which is a great deal because they're $.69/lb loose!). There are a number of variations out there, most of which still keep it pretty inexpensive, and it freezes great.

I'm going to try to start a "soup and salad" night one night each week for dinner. There are so many good soups out there, perfect for the cold weather, and cheap, cheap, cheap!

I have been making chicken and dumplings. It is basically a thinned bechamel sauce with chicken and spices in it. I throw a stick of butter in a heavy bottomed pan and melt it, throw in 8 TBSP flour, and stir. When mixed, pour in four cups of milk and stir. When it is thickened, add in broth or water (or more milk) to thin to more of a "soup" consistency. Add in your leftover chicken and eventually a bag of frozen veggies (or left over ones, if you have them). I double a dumpling recipe out of a cookbook and throw those on top and cook for a while (recipe says 10-12 min, but takes longer sometimes).

You can use chicken broth instead of the four cups of milk if you want. I like the milk because it gives it a creamy texture. I like to make it a little thinner that I really want it because when I add the dumplings, they tend to thicken the liquid.

1. Borscht, with roasted beets, carrots, onions, parsely, dill, some tomato paste to make it rich.
2. Tomato chickpea - with chopped tomatoes, chickpeas, rosemary, tomato sauce, chicken stock, and powdered hummus to make it creamy. If greens are cheap, I finely chop up a bunch and put that in.
3. Minestrone - whatever vegetables are at hand, its more of a spring soup. If you put in a parmesian rind its really spectacular.

My ultimate comfort soup is chicken and rice. Boil chicken pieces in lightly salted water with one rib of celery, about 20 minutes. Remove meat and let it cool. Remove celery and discard. Add rice, white or brown (1 part rice to 4 parts broth) and continue to simmer about 20 more minutes. Meanwhile, debone chicken removing all the skin. Add to pot with black pepper to taste. Yum.

A really easy and good one is Brocolli (ecxuse my spelling :-P) just get water and and the Brocolli and grind in mixer. add a pinch of salt and pepper. Volva! Than you can take some cheese (whateveryou prefer) and slice that up with it.

If I have time, my family loves carrot and rice soup. It has a chicken base, tarragon, really nice.

When we are shoveling snow, the favorite comfort after wards is 3 cans of tomato soup, two cans water, can of chopped tomatoes, cup of instant rice, cook it, and pour over or add on top bits of Munster cheese. YUMM.

I love butternut, potato, corn, and green bean.

The family's fave is homemade chicken noodle.

At work, the cooks make a salsa corn chowder that has taco chips and cheese on top...absolutely to die for!

I make soup 1-2 times per week all winter. Everyone in the house loves it except DH, so I make it on nights he's in school
-Vegetable beef
- Chili
- Kielbasa soup (thick, with beans, carrots, and potatoes - the best comfort food)
- Ham and bean, made with a ham bone, leftover mashed potatoes, and navy beans

A lot of times I don't follow a recipe, but just use up whatever I have laying around. The thing about soup is that is always comes out good!

The Classic: Chicken soup with barley, chicken, stock, celery, carrots, onions

Pea Soup: Parsnips add a gentle carroty flavor; also leeks

Salmon corn chowder: Very yummy with sliced zucchini, creamed corn

Lamb stew: among my top 3 favorites

I also make a Beef/Veg and a Chicken/Veg for DH to take to work as they are both low carb so good for his diet. Also a Cauliflower and Bacon Soup which is also low carb.

We love soup at our house, using old recipes and trying out new ones.

Some of our favorites are 16-bean soup, split pea soup, taco soup, and minestrone.

We love stews and chilis too. Cheap, yummy meals in a bowl - can't get much better!
