I will post the "full carb" recipe in case anyone else is interested. To make it "low carb" I just omit the potatoes.
Cauliflower Bacon Soup 2 tbs oil or butter 2 small onions, chopped 250g bacon, chopped 3-4 small potatoes, chopped 1 cauliflower, cut up into florets 4-5 cups vegetable stock 230 ml cream Heat the oil/butter in a large saucepan. Add the onion and bacon and fry a couple of mins until soft. Throw in cauli and potatoes with stock and bring to boil. Cover, reduce heat and simmer about 15 mins until veges are soft. Puree soup in blender or food processor (may have to be done in batches), then return to pan and stir in cream. Rheat gently and season with salt and pepper to taste. Eat and Enjoy ![]() |

My household votes for my split pea with ham as their favorite here..........with potato soup coming in a close 2nd. They don't know the potato has leek in it too.......
![]() To add a special treat, depending on supplies in the fridge, we like to make baked potato soup...........which, done our way, is just the regular soup, with baked potato toppings on the bowl. Sour cream, bacon crumbled up and fresh chives out of the garden! Yummy. Time to put the kettle on with something simmering! Soup is such a great meal here........add a bread of some sort and a dish of our home canned fruit and we're done! I always make my BIG kettle full of soup & then freeze it in zip locks, using different sizes, as my household size varies between week nights and week ends. I'm so grateful for my big freezer!!! someone posted onion soup. whats in it? heard it was good, but have never tried it. in the summer, our onions are usually by the bucketfull-sounds like a way to use some up.
