Default What's for dinner wk of Sept 11th

Making a menu is my main way of keeping our food budget in check.

Today will be making a batch of french toast for breakfast this week. I am letting my first grader do hot lunch at school. It is $1.50 for the day which includes milk. So I don't think that it is a bad price.

Sun Cheeseburger pie

Mon Mexican Lagansa

Tues Homemade chicken nuggets, pototos,

Wed Leftover mexican lagansa

Thur Sandwiches in the car got soceer and the cub scouts.

Fri Chili

Sat Homemade pizza

Super easy....


2 cooked chicken breast cut up into 1-inch cubes (chicken is optional-if we are doing a meatless meal, we don't add it)
8 burrito size flour or corn tortillas
1 15 oz can of black beans or kidney beans
1/2 jar of salsa
1 can of diced tomatos or 1 cup of fresh tomatos
1 cup of onions
1 green pepper diced optional
1 red pepper diced optional
2 cups cheddar cheese


Directions
Cover the bottom of a 9 x 13 baking pan with salsa
Place two tortillas over the salsa
Layer some beans, cheese, onions, pepper, salsa and chicken over the tortilla
Repeat and keep layering
Keep enough cheese aside to cover the top layer.
Cover pan with aluminum foil and bake at 350 degrees for 40 minutes

Serves 6-8

thanks, gonna have to be vegetarian, can't cook chicken right now (silly pregnancy thing, soon it will be over .)

Here's my menu plan for this week. We have already eaten some of it.
1. Chicken Adobo, rice and whatever veggies I can find to stir-fry. having this tonight.
2. Chinese Beef with Broccoli, chow mein noodles and rice (my dh doesn't care for the noodles)
3. Chinese Pepper Steak and rice - had this a couple nights ago. (peppers from our garden)
4. Chuck Roast BBQ on buns, and whatever veggie I have onhand
5. Leftovers
I had some meat left from a chicken dish we had last week so made a Honey/Dijon mustard chicken dish, stir-fry veggies and rice
I had extra beef I didn't need for the Chinese Pepper Steak so made another dish (already forgot what it was called) with that.
Whatever I don't fix by Wed is put on next week's menu plans.
