Tasty Eggplant Recipes?

I just bought three beautiful eggplants from the farmers market, and I must admit - I'm not sure what to do with them.

If you have any delicious vegetarian recipes (no fish/meat/chicken, eggs & cheese ok) involving eggplant, please share. Thanks!

I make eggplant pizza. I slice up the eggplant, through some sauce, some italian spice and some mozzerella cheese and briol for about 10-15 minutes. Very yummy.

I was going to suggest the same thing! LOL! Also sauce (pizza, spaghetti, ect) on an English Muffin, thin eggplant over tip and some chesse over that- toaster oven one cycle or a couple of minutes in a regular oven, and a yummy "pizza!"- Have fun!

I love eggplant parmigiana...
Slice eggplant thin, dip in egg and flour, fry in a bit of oil and put in a baking dish. Cover with pasta sauce and then sprinkle mozzarella cheese on top. Bake at 450 for about 30 minutes...yum!
