Frugal vegetarian meals are simple to make, healthy, delicious and cost effective.
Knowing the basics to shop for is important. This includes beans (dried or canned), brown rice, oats, pasta, lentils, carrots, onions and potatoes. Other ingredients are fruits and other vegetables including sprouts, seeds and raisins. My family eats these dishes at least 3 times a week; probably should be more often; but we're working on it!
