Default Challenge: Loss Leaders and Meal Planning

Every Sunday during the school year I spend a couple of hours fixing some casseroles or items to put in the Crockpot so we have dinner or parts of dinner ready to fix or put on for a hot meal after work. Yesterday I hit a locally owned grocery with a bunch of coupons and loss leader items sale flyer and also found a few things not advertised on sale. Here are the items:

5 lb. bag of potatoes (Russet)
bag of onions
roll of sausage
package of shredded cheese
split chicken breasts


What are some things you'd do with these items and whatever you have in the pantry to make a couple of meals?

This is what I came up with:

Egg casserole -- used up 6 eggs and leftover bread from last week to make a casserole. Sauted half of the sausage with chopped onions and made a cheese sauce with some the shredded cheese and milk. I added a green pepper and celery to the sausage and onions to add.

Sauted more onions and parboiled some potatoes and made a cheese potato casserole with the rest of the shredded cheese and milk mixture. I will roast the chicken to serve with it.

I plan on using the rest of the potatoes for beef stew in the Crockpot. And I still have potatoes left.

What would you have made?

Roasted rosemary chicken and potatoes, and onion slices sauteed w/ italian dressing. I'm not sure how well it could be done in the crock pot (I normally do it in the oven), but I'm sure it can be done. It's one of my favorite things to do with chicken. I don't normally do cheese myself, but I'm sure it could be added on top.

With the sausage, I'd do either my no-bean chili or a big pot of tomato sauce for pasta. Both are real easy, taste great, and perfect to freeze for later use.
