After my creative funk last week...
Sun Steak and cheese subs, french fries, salad Mon kielbasa and baked beans Tues Hamburger and dirty rice mixture, probably in stuff peppers Wed Bisquick Chicken Salsa Thurs Over Mom for Dinner Friday Leftovers.... Saturday Homemade pizza I have veggies on the side for most of these. Some frozen brocooli, canned corn, green beans will probably be on the side for atleast each night. Usually salad for me as well. Sometimes soup-great deal on tomato soup last week at Save a lot. We have been doing really well with no eating out. So planning meals for me is key. |

Sunday was black bean soup and cornbread
Last night was tofu mole enchiladas, corn and apple slices Tues: Chili, not sure what else (maybe grilled cheese sandwiches) Wed: Leftovers Thur: going out to dinner Fri: Spaghetti and salad Sat: going to dinner party Sun: My goal today is to figure out meals for Fri and Sun based on what is here in the house already. (Figured out Friday, just need Sunday now) |

last night was split pea ham soup, with lots of leftovers for my lunches.
tonight is BIG salad sometime this week, pizza or calzones, homemade potato soup ground meat streatched, a lot! Spicy Noodles (K thats where the leftover soup comes in very handy for me!) I am in the mood for chicken wraps, but I am not sure if we can afford the ingredients this week, we need some non food supplies too. If we can't we'll have chicken pasta or rice surprise, the surprise being theres no chicken. |

What is the tofu mole enchildas March is going to be a really tough month. We have extra bills this month-life insurance and hubby told me his commission checks is going to be on the low end. Mortgage went up as well... twins birthday it never never ends. The food bill is always something that we can make stretch. |

If I'd had jack cheese I would have put some in, but all I had was cheddar and that didn't sound good. Fresh cilantro would have been nice too. (I was trying to use what I had on hand.) It was extremely easy to make, and DD helped mash up the tofu. |

Thanks Jen! I may try this... I will have to head out to Trader Joe...we just go a new one around here.

DH and I try not to eat meat. I don't cook with it anymore.
If you try the mole, let me know how you like it. It is a unique taste! (Or maybe you've had it before?) And you mix the mole and broth together first, making a sauce out of it, before mixing it with other thigns or pouring it on top. |

No I haven't tried mole. It sounds interesting. Always look for new things to try.
