Default Menu planning week of Jan 30th

A little late with this but I have been crazy getting some stuff done around the house.

Sun leftover chicken enchildas
Mon Meatloaf mashed potatos and green beans
Tues Pork sirlion in the crockpot
Wed leftover meatloaf and spaghetti and sauce
Thurs Crockpot Chicken Salsa w/rice
Fri Clean out the fridge night leftovers or soup and sandwiches
Sat Son's bday party Ordering pizza for his party

Crockpot Sour Cream Salsa Chicken



Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours.

When ready to serve, Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

Add up to 3 cups of cooked rice to crockpot right before serving.

For the rest of the week...

T: Boca Burgers, potato wedges and salad
W: Burritos/soft tacos
TH: Spaghetti, salad, garlic bread *my DD's 5th birthday!*
F: Leftovers
Sa: Likely grab (or make?!) sandwiches with friends from out of town before they drive home
Su: don't know

Jen I have to laugh ... both of our kids birthday dinners are basically the same. My son requested spaghetti of course this morning he brought up a can of spaghetti and meatballs . Nope, I can't stand that stuff but be gobbles it up.

I have to listen to I am now 6 yrs old all day long today. This is what 6 yr olds do, 6 yr old have more power... LOL
