Default Quick & Easy: Family Style Enchilada Rice and Beef

Sometimes you just need quick and easy. This is it. This is what I call a pantry recipe as you can keep almost everything needed to make it on your pantry shelf for when you need a quick easy meal, and most of us keep some extra ground beef in the freezer most of the time, so it should be a no-brainer and is one that teens & pre-teens could easily prepare. A true frugal-ite would make the rice themselves from scratch.


Family Style Enchilada Rice and Beef
from Uncle Ben's Rice

SERVES: 4
PREP TIME: 8 Minutes

INGREDIENTS

1 pkg. Uncle Ben's Ready Rice

INSTRUCTIONS
1. Cook ground beef in skillet.

2. Add soup, tomatoes and black olives.

3. Heat Uncle Ben's Ready Rice in microwave.

4. Add heated rice to meat mixture and serve.

Okay, we made this one last night and I've got to say it's fairly bland like it is and I'm a 'hot sauce wimp'. I punched it up a bit w/about a quarter cup of mild salsa, which still wasn't enough. Needs spice & revvying up for me - the queen of 'Super Mild' sauce fame. A 'hot sauce champ' will need much more reinforcements! But - it was easy out of the pantry and quick.

There weren't any leftovers.

Additions I made:
Cooked the beef w/chopped onions & fresh garlic, season salt, worcestershire sauce and 1/4 cup of mild chunky salsa.

sounds good! I agree a dash a salsa probably did wonders to add a bit of flavor! I may have to try that sometime.
