Prep/Cook Time: 25 minutes Ingredients: 24 wonton wrappers or eggroll wrappers 1 lb. lean ground beef 1 pkg. Taco Seasoning Mix 2 tbsp. picante Sauce 1/2 cup chunky Salsa 1 cup shredded Mexican blend cheese Directions: PREHEAT oven to 425 F. PRESS wonton wrappers into mini-muffin cups. COOK beef in skillet until browned. Drain off fat. Stir in taco seasoning mix and picante sauce. SPOON beef mixture into wonton cups. Top with salsa and cheese. BAKE about 8 min. or until wontons are golden brown. SERVE immediately with additional salsa. Garnish with sour cream and sliced ripe olives if desired. Makes 24 appetizers. YUM! This sounds good. I think I'll give this a try this week
I was planning on having tacos anyway. This will be a nice change from the usual!I just need to remember to put wonton wraps on my shopping list! |

Great just remember that these are supposed to be appetizers and will work as a meal if you augment with something else like Spanish rice, or possibly double the recipe if you've got a crowd or big eaters and want to use this as a main dish.

I wonder if it would be possible to get tortillas to work in muffin cups, once they were cut down to size? The wonton wrappers wold certainly be easy, but it's tortillas I have on hand right now, not wrappers.

Okay, thanks. I already have them down on my menu this week. I was planning on serving refried beans on the side, but maybe I'll add Spanish rice too!

I went and got some wonton wrappers yesterday so that I could try this out.
For the vegetarians out there, here's what I did: Sauteed some chopped onion in olive oil. Added soy ground "beef" and heated through. Put in a bowl and mashed in some tofu. Put wrappers in muffins tins, spooned in some mixture to each cup. Topped with salsa and cheddar cheese. Baked. We had these along with a nice big green salad and optional sour cream on the side. DD loved them - I left some salsa-free for her. |
