Default Holiday party appetizers

Yesterday, I spent my day making appetizers for a party tonight. My goal was to use ingredients that I had on the shelf. I made tortilla chips from Target's Mexican coupon offer. I painted them with live oil- sprinkled Parmesan cheese- pressed it in place and then sprinkled with garlic, onion, and paprika. Bake in over 8 minutes. Store in airtight container.

Next I found a bottle of Ragu cheddar cheese sauce. I added a big squirt of dijon mustard and ham cut into tiny pieces.

Next, I pulled out a couple of cans of Pillsbury bisquits- I cut each bisquit into 8 or so pieces in a bowl, then added a layer of pepperoni, a layer of canned spaghetti sauce, basil, oregano, mozzarella cheese, a layer of bisquits- continued- until the ingredients were gone. I poured it into a baking pan and baked for about 20- or so minutes.

Finally, I took two large chicken breasts sauteed them. Cut them up in a fine dice, finely diced celery, finely sliced grapes, added a combo of mayo and sour cream.

I spent $2.50 for the ham at Aldi's- I used maybe 70¢ worth in the dip and the rest will be used here at home. Hopefully, people will eat t tonight!!

You know, it was interesting...there was so much food it was ridiculous! I bet there was enough food to feed 60 people- rather than give 25 people stuff to munch on. The shame of it? I know the couple who had the party threw everything out at the end of the night. (These are the same people who wonder how we can live on one income). We had to leave early because my husband had to work the next day. I am SOOOO glad I did not spend a fortune on appetizers.
