Default Crock Pot Recipies Wanted

Hey all I'm starting to get into Crock Pot cooking as my lil ones have issues w/ not staying out of the kitchen when the oven is on.

So I'm looking for simple, inexpensive, filling recipies....

Any suggestions?

I also love my crock pot, as it works while I'm at work. It doesn't get any easier than this, and even my little kids will eat it:

Slow Cooker BBQ Chicken

Supplies:
Whole chicken, or chicken in pieces (can be white or dark meat)
Bottle BBQ sauce (I get mine at the $1 store!)

Steps:
1. Coat the inside of the slow cooker dish with a little oil to prevent sticking (I use olive oil)
2. Place chicken in the dish.
3. Pour most of the bottle of BBQ sauce over the chicken.
4. Thawed: cook on low for 6 hours Frozen: cook on low for 8-10 hours

The chicken will be super tender. Take off the meat and make into BBQ sandwiches or serve with salad.

boneless porchops with a jar of salsa . I serve over rice to make it last.

I freeze leftovers of "whole" foods (corn, spaghetti sauce, hamburger meat, potatoes, tomatoes, beef broth, etc), however small the amount (ice cube trays work great for this purpose).

When I have a good stock, I pick up some stew meat from the grocery store and maybe a can of diced tomatoes.

Throw the whole lot into the slow cooker, add some chopped celery, maybe another potato, some herbs and spices (whatever your family likes), and you will have an affordable and delicious stew in 6-8 hours.

And you'll have the very satisfied feeling of knowing you used all your leftovers.

It's hard to go wrong with a slow cooker...

All great ideas, especially the BBQ chicken. I don't have a Corck Pot yet, but I plan on getting one. That is going to be the recipe I use to break it in. Crock Pots seem to make your meals more hearty and you get full faster. My mom used our Crock Pot lot when I was growing up! The Crock Pot has to be one of the greatest kitchen appliance inventions ever!

I totally concur on the Crockpot being a great invention!

I have 4 different sizes of them. I use one to fix a whole chicken with a few vegetables and take that chicken and broth and make other meals.

Another site you might try is allrecipes.com and type in slow cooker.

Spicy Lentil & Sweet Potato (kumara) soup:
several large kumara, peeled & chopped
green lentils
vegetable stock (or water & stock powder or cubes)
1 tin tomatoes
cumin, ground coriander seed, salt & pepper
grated ginger, peeled & chopped garlic
chilli flakes (optional)

the amounts will obviously vary depending on the size of your crock pot, if it is too thick just add more water. I usually cook on low setting for 6-8 hours then blend. it is sweet, and you do not notice the lentils when it's blended. high in protein. nice with freshly chopped coriander and a spoon of plain yoghurt/cream/sour cream.


Minestroni Soup:
2 cans tomatoes
tomato paste
stock (or water & stock powder/cubes)
any mixture of cubed vegetables (I use sweet potato, pumpkin, potato, brocolli, brussel sprouts, green beans, capsicum, carrot etc)
ground coriander
dried herbs (marjoram & sage is nice)
bay leaf
salt and pepper
garlic, chopped finely
pearl barley, rice or pasta (add this 1 hour before serving)

Add everything into the crockpot except the rice/barley/pasta and cook on low for 8 hours. We have this with freshly grated parmesan & a dollop of pesto & some nice rye bread.


Mexican Beans:
Kidney Beans (tinned or dried & soaked overnight)
Tinned Tomatoes (I usually use equal parts kidney beans/tinned tomatoes)
finely diced carrot (about 4 large)
Corn (tinned or fresh, shaved off the cob)
Tomato Paste
Generous amounts of: Cumin, Turmeric, Marjoram, Ground Coriander, Salt, Pepper, Garlic & optional chilli flakes & paprika (if you don't add enough it won't have a real 'mexican' flavour)

Cook on low for 6-7 hours.
(This last one is a great recipe, I make a large batch & freeze in servings for chili beans over rice, nachos, tacos, burritos, enchiladas etc).


With the last one you could add beef if you wanted to, and to the minestroni you could probably add chicken or some kind of meat to the soup. (?) I don't know, because I don't cook them with meat.
