Default Turkey left over recipes

This seems like a good time to ask. Does anybody have any good left over Turkey recipes. I usually boil the carcass and then freeze the stock for soup. Any other ideas?

I have dinner size containers with the divided compartments. When I am putting the leftovers away, I take those out and make multiple TV dinners of leftover turkey, stuffing, gravy, potatoes, sweet potatoes, noodles, etc. A week or 2 after Thanksgiving and these taste really good.
I usually make turkey salad for sandwiches which I really like. And, turkey enchiladas are simple with turkey, salsa, shredded cheese, roll in a tortilla, cover with salsa and cheese and bake. The mexican flavor breaks things up a bit.
I freeze the carcass and make turkey noodle soup at a later date. Otherwise, we would be so sick of turkey no one would probably eat it.

I just made a turkey salad sandwich tonight that was pretty tasty. I modeled it after Arby's Market Fresh chicken sandwiches, which my parents introduced me to a few months back.

Cubed turkey (or chicken)
Mayo (I substituted in a little bit of plain yogurt to make it a little healthier)
Cut up grapes and apples
Walnuts

Mix together with salt and pepper (or whatever you like). Spread on bread. Top with thick slices of sharp cheddar cheese and bacon.
Of course, all these add-ins are optional. Use whatever you like. I have seen recipes with mandarin oranges, pineapple, and raisins too. It's a nice change from your typical turkey sandwich.

I watched a special on Food Channel and some diner makes a "Turkey Dinner Sandwich" which has turkey, stuffing, potatoes and cranberry sauce on one sandwich.

Turkey Enchiladas

Great way to hide boring turkey taste.

Need: leftover, shredded turkey
corn tortillas, small
can of enchilada sauce (red or green)
grated cheddar cheese

1. Warm 6 or 8 corn tortillas in the microwave, only a couple at a time for about 10 seconds each tortilla.

2. Roll turkey into tortilla and place in buttered glass rectangular dish.

3. Complete rolling all tortillas and line them up in glass dish.

4. Pour canned enchilada sauce over the whole thing (mild or hot sauce).

5. Sprinkle with cheddar cheese.

Bake 20 min until hot and bubbly. Serve garnished with sour cream or avocado.

You could always use the turkey for wraps, which is a healthy dish. Add whatever veggies you like to your wrap and whatever dressing you typically use. Good for lunches.

Something different.....DH and I love this.

Pull apart (shread) turkey (I like to use both light and dark meat)
chop an onion
bbq sauce

simmer until onions are soft and serve on a sandwich roll.

I made chicken croquettes lst night for dinner. These are easily made with turkey and they freeze well.
