1)Venison stew - big hearty MANLY MAN size chunks of taters, onions, carrots
2)Venison lasagna
3)Venison or beef Roast again w/biggly big taters hunkered about looking all camoflauged in gravy!

Remember the homemade hot rolls and a big peach or blackberry cobbler!

I grew up on a hunting preserve where we served family-style meals. These were always hits.

Uhhh...99% of the time I don't cook with a recipe. Couple of hints...

Most of the gamey flavor is in the fat, so trim it up as much as possible. If you think you need a bit of fat throw in a few slices of bacon or beef fat while it is cooking

Take out a big cast-iron frying pan and beat that stew meat flat before you cut it up. Or if you've got one of those meat tenderizing hammers give it a bunch o'swats. Pickle juice is your friend. After tenderizing marinate your meat in pickle juice 4 hours minimum but better overnight - rotate it every few hours. Throw away marinade. Sear the meat quickly in the cast iron skillet. Use a pressure cooker to get it super tender - minimum amounts of water - try not to drown the poor thing - think moist slow heat. Don't overcook it.

I use worcestershire sauce in cooking meat and Season All brand season salt. Also if no-one is allergic I use Accent (MSG) as well. Seasonings added after it almost completely done.

CHUNKY VEGGIES - Potatoes, Carrots, Onions, then add lots of brown gravy...no fava beans or fru-fru veggies please! If you use red potatoes you can leave skins on - and the least amount of washing you can do to them before throwing them in the pot the better - seems dirty tate's taste better than those squeaky clean.

Sirloin stew would work as well. I'm thinking MEAT is the most important ingredient to feed hungry hunters. They always seemed ravenous to me!

Well DH hunts every year. This year he got a buck with his bow and arrow in August (when the season starts) and then got a bear last week. I hate bear meat and don't plan on eating any of it. We had 80% of the venison ground into venison burger, which I really like, but I don't like the rest of it.

Anyway to take hunting to eat, this is not a casserole, but you could make up burritos and wrap in foil. Then they can toss them into the campfire.

DH and his friend barbecued meat, take a bunch of potatoe salad and grill corn or something, but our season is still when the weather is kind of nice.

Another idea DH just offered is chili verde.

I love the burritto idea. That would sure to please. I ended up making two large mexican cassaroles because I was rushed for time. This weekend the hunt is on again.. I reckon' I will be a deer widow for quite a while longer. Oh, I also sent some peanut butter cookies homemade and monster mash which the men seem to love.. popcorn ressee peices, mms and rasins and peanuts......Guess a grag and go thing for the deer stand!

I have been told that soaking deer meat in milk helps take out some of the gamey taste.
I'm not big on the taste of deer meat but can never taste it in chili.
