Arrow Great Healthy Inexpensive Snack

Chewy Oatmeal Snack Bars they are inexpensive to make and extremely fulling. Here is the recipe:

All you need:
3/4 c. brown sugar
8oz applesauce
1 tsp vanilla
1 large egg
1 1/2 c. flour
1 tsp baking soda
1/2 tsp salt
2 1/2 c. uncooked quick oats
3/4 c. chopped pecans

All you do:

1. Heat oven to 350 degrees. Spray a 13-by-9-inch baking pan with non-stick cooking spray.
2. Mix brown sugar, applesauce and vanilla until smooth. Add egg and mix until well blended.
3. In medium bowl, combine flour, baking soda and salt. Stir into wet ingredients. Stir in oats and pecans. Mix well.
4. Spread into prepared pan. Bake 15 to 18 minutes or until edges are golden brown. Cool completely and cut into 30 bars.

I figured out the total cost of the ingredients divided by the 30 bars I made and it cost me about .11 cents per bar. Definitely a snack I will be making again! And I love the fact it is healthy for my kiddos!!

Sounds yummy - but not sure I could convince my crew here that the recipe makes 30 bars!

I got 30 bars easily and even though the squares were not huge they did fill up the kiddos.

I make my own trail mix. It's a lot cheaper than the pre-mixed vairety and you can include whatever ingredients you prefer: dried fruit, chex, yogurt covered raisins, pretzils, nuts, and anything else you can find. There's usually a section at the end of the produce (if not a whole natural foods isle) with a wide vareity of trail-mixy type things.

I made these today and they are very good I made a few changes. First, for the flour I used a combination of 1/2 white and 1/2 whole wheat to up the nutrional value. I didn't use nuts, but used 3/4 butterscotch chips(on sale of course!) instead...okay there's goes the extra nutrional value(rolling my eyes).
I used a smaller pan. Mine was a 12 x 8 which made the bars thicker. I got 20 nice thick sized bars.
