Looking for suggestions on what to do with overripe bananas. I guess making banana bread is a good choice... any other ideas? Thx.

My wife always uses them to make, as you said, banana bread.

I give them to someone who can make banana bread, I cannon, multiple attempts and nope, no bread, edible sweatish, sorta bananalike bread, but not really banana bread...so I give up.

But if you catch them before they are overripe, freezing for a smoothie is good, if you like banana smmoothies, I don't.

Smoothies. Milk/reconstituted powdered milk/soy milk, and/or some yogurt. Other fruit if you like. Sweetener to taste, but I don't usually use any with overripe bananas. I use these for a quick breakfast.

Isn't it too expencive to buy baby food banana. Two cans can cost almost $1, and they have only as much as 2-3 bananas for both. I think, bananas will cost like twice less. I even mashed bananas for my kids when they couldn't eat regular food yet, instead of buying them in jars. One time we were in the store and bananas vere not on sale, my son wanted a banana, so I bought him one, it was like 16c only. (Cheapper and healthier than a candy)

When I have overripped bananas, I either tell everyone in the house to eat them, 1-2 for each person and they are gone, or make sort-of kind-of pie.

I slice bananas.
Then take any cake recipe or use this one

1 cup sugar
3/4 cap margarine or other fat
3 med eggs
vanilla (optional)
salt
3 teaspoon baking powder
3 cups flour
1cup milk (or 2 tbsp dry milk and cup of water)

if the mixture is too dry, add little bit of water

Pour about 3/4 of it on a pan (one large or 2 9-inch), then put bananas, then cover it with the rest of the mix.
bake in a 350degrees, for 20-30 min or untill ready, try with a toothpick.

I would love to have a banana at the moment. But price here is to expensive to be on my budget now @ $9.98 to $18.00 kg (2.2lbs to kg) around $2.00 each for a small banana. This is until next season too!

I saute them in butter and sprinkle sugar over so it camelizes. Yummy! Also a nice ice cream topping.

Ouch! and I complain about the price here!

Actually we get a 'bag' for 99cents at BJs (3lb=little over KG right?) which is good, it is the grocery store prices I complain about, I always wonder why there is such a price difference.

Overripe bananas taste great in smoothies. I toss in the banana, half a cup to a cup of frozen fruit (strawberries are cheapest), half a cup of yogurt, water, and maybe a bit of soy milk (about a cup of liquid although I never measure exactly). Because the overripe bananas are so sweet, you don't need any sugar. This is a quick way to use them up and especially in , when you might not want to turn the oven on, a good alternative to banana bread.

If you toss the banana in a fridge as soon as you decide it's destined for uses other than fresh, the inside will stop "turning" although the outside will definitely turn black.

You can also peel them and then put the chunks into the freezer and then you wouldn't need any other frozen fruit to give bulk to the smoothie.

I have a bread machine banana bread recipe. I like it because the bread machine doesn't heat up the house as much in the summer time.

Bread machine banana bread

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup sugar (or 1/2 cup if you want it less sweet)
3 tablespoons oil
2 eggs
2 bananas-chunked **see note**

I just throw it in the bread machine thing. Bananas, eggs, and oil first and the dry ingredients on top (it mixes better that way). I then set my bread machine for batter bread and walk away

NOTE:
I use 3 (or 4, if they are small) bananas and have one of the kids smoosh it up pretty well until it is liquidy. I add it in with the liquids. I also throw in a teaspoon of vanilla too.

Edited to add: Oh yeah, forgot to add that I put a dash of cinnamon in it too.
