french toast casserole:
mix everything the night before and then poured over the french bread in the morning prior to baking..

1 loaf french bread
6 eggs
3 cups milk
1/3 cups sugar
2 tsp. vanilla extract

prespray a 9x13 pan with non-stick spray. tear up the bread and place it in the pan. combine the remaining ingredients together. pour them over the bread.. bake at 375 degrees for 45 minutes. dust with powdered sugar. serve with syrup or honey.

make ahead crockpot breakfast apple cobbler:

4 medium apples, peeled and sliced 2 T butter, melted
1/4 c honey 2 c granola cereal
1 tsp. ground cinnamon

place apples in slow cooker and mix in remaining ingredients. cover and cook on low 7-9 hours (overnite) or on high 2-3 hours... serve with milk.

make ahead farmers breakfast casserole:

24 oz. frozen shredded hash browns 1/2 c green onions, sliced
3/4 c. monterey jack cheese shredded 4 eggs, beaten
3/4 c. cheddar cheese, shredded 12 oz. can evaporated milk
1/3 c. mild salsa 1/4 tsp. black pepper
1 c. ham, or bacon diced 1/8 tsp. salt

make ahead: the day before.. grease a 2 quart square baking dish.. spread the potatoes evenly into the bottom of dish.. sprinkle with cheeses, ham, salsa, and green onions.
combine the eggs, milk, pepper and salt and pour over the potato mixture.. cover and refrigerate.. to serve, bake uncovered at 350 degrees for 45 minutes.. until knife inserted in center comes out clean.. let stand 5 minutes before serving... you can add additional cheese the last 5 minutes of baking on the top.

Breakfast Strata-
Big oven pan
tear up bread for 1st layer- does not matter what kind of bread
sprinkle a layer of cheese- any kind-
sprinkle a layer of any meat -sausage, hamburger, ham, pepperoni,
sprinkle a layer of colorful vegetables like red, orange or yellow peppers
sprinkle a layer on onion
greek seasoning
repeat the layers until the pan is full.
beat 6 or 8 eggs with a little milk
pour it over the bread stuff
cover with plastic wrap- weight it down9I jsut use another pan with a can in it
stick it in the fridge over night.
The next day bake it. Usually causes rave reviews and it cleans out my refrigerator!!

we ate hash browns fried in butter on low today... scrambled eggs fried.. whole wheat toast with butter and grape jelly... chocolate milk... delicious!!!

we made simple apple turnovers made from cheap store bisquits, crock pot cooked apples, just added cinnamon sugar, nutmeg to the apples... patted out bisquits, filled with apples, baked 350 degrees for 20 mins... delicious....
