what is your menu for the week?
monday: fried corn bread, salad cr of celery rice soup, rice pudding with
cream and cool whip.
tuesday: veggie burgers, salad, fr. fries, fruit salad
wed: salmon patties, baked pot, green beans, brownies
thurs: soups on, veggie, garlic bisquits, banana pudding
fri: date nite: fish, fries, hush puppies, cole slaw, choco ice cream

Sorry, no menu here. I pull something out of the freezer each afternoon and try to use whatever I have fresh in the fridge. We rarely decide what's for dinner until that day, although we also rarely make special trips to the store for anything because I try to keep the essentials well stocked.

Here are my notes to go with my set of menus, this set is of 5 weeks menus is written so that I will use want I have in my freezer.
NOTES : Pre-frozen dinners are in single serve
Rice ½ - 1 cup per serve
Rice cooked in bulk & frozen, in single serves.
Soak thawed frozen rice in cold water for 10 minutes as it will look a little dry, then strain.
Microwave on Medium until hot. 2- 4 minutes.
Just like frozen rice from freeze section.
Fruit what is in season & in refrigerator at the time. Serving, size of tennis ball or smaller.
Dry cereal Nutri –Grain or Meusli ½ to 1 cup limit
Popcorn air dry, no flavour
Ice cream ~ yoghurt frozen low calorie homemade, 1 scoop serving
Garden Salad ~ fancy lettuce, tomato, shallots, olives, pickle onions, fat-free Italian dressing
Recipes: Fish Cakes, Chili beans, Chickpea Curry, Vegetarian Mushy Bean Mix,
Shepherd Pie, Steak & Kidney and Satay Chicken recipes on file.
Honey Mustard & other mixes Chicken To-night with 2 cups extra mixed
vegetables & only 300g of chicken.
Beef & Black Bean Stir-fry, & Ceylon Chicken Curry are made with what available at the time.
Meat portions: allow 100-125g raw meat per-serve. More if with bone 200g
Roast Chicken ~ whole chicken cooked and made into serving for future.
Size 16 chicken ~ 3 roast dinners & 2 serving cooked chicken plus soup.
Chicken Curry, Sandwich or Chicken Salad are possible.
Vegetables ~ what’s available at the time. 3-4 serving per meal.
One of each colour. Spinach, Beans, potato, corn & carrots
Leftovers: Freeze for later uses, pack in single serves.
Cost of Economical Breakfast ~
2 weet-bix 9c
¼ cup skim milk 5c
3 prunes 5c
1 toast 4c
Black Coffee or Tea 3c
Hot Water 0 = 25 cents
Cost of Economical Breakfast ~
1/3c Quick Oats 4c
¼ cup skim milk 5c
1 tsp. Honey 3c
1 toast 4c
Black Coffee or Tea 3c
Hot Water ¾ c 0 = 19 cents
Note: If you have Jam & Butter on your toast adds 30c
Vegemite add 2c

I have never had a menu. We eat out of our pantry, a few basic meals, that vary with the seasons. A lot eggs, and bread, and beans, and torillas, and potatoes. Lots of combinations possible. I think it is very possible to be thrifty without a menu, if you eat many of the same basic low cost foods. Every now and then we have to use up a vegetable, but so many dishes can do that.

Yesterday was 'stuff your own calzones' (company)
so today is 'use up the leftovers'  (I have a lot os fause, might add tomatoes to trun it to spag, or bubble in squeak)
Then we have 'white bean soemthing (DS wants me to make something with white beans, so I will...
potatoes (I have half a bag, I need to use it, prolly soup, or baked, or parsleed potatoes..)
Not sure about the other nights..

Why so many menus?
I found that I was not eating a balance diet and need to use what I had in the freezer. As I do OAMC by mini plans. Cooking up a meal for four then freezing three portions in which I needed to use up within two months. These are menus for using up whose frozen dinners and having other meals at the same time. I have lived alone for past ten years. At the moment I am living off my freezer and pantry for next few months.
I'm posting an item on 'Meal Strategies for one' in my Blog in the next few days.

Monday - bbq chicken, cornbread, green beans
Tuesday - tacos using ground turkey, refried beans, salsa
Wednesday - red beans and rice (me) and mac-n-cheese (DS) - DH is working
Thursday - ravioli & sauce, garlic toast
Friday - fish sticks, mashed potatoes, green beans or peas
Saturday - beef steaks, corn on the cob, cornbread (again!)
Sunday - rotini pasta bake with shredded cheese
FRI, SAT, and SUN may vary since we are going shopping on Friday and any good deals will supercede the menu items we have there now. **wink**

It's amazing how much money I saved by planning a menu...usually a month at a time. I used to hit the grocery store each day after work to pick up something for dinner. I can't even begin to think how much money I wasted by doing that.

mon...... grilled cheese with baked nacho chips, granola bread, choco ice cream cone
tues......butternut squash, corn bread, corn on cob, parmesean cheese sticks, cookie
weds.....baked potato with cheese, broccoli and bacon topping, raw carrots and dip, graham cracker with peanut butter
thurs.......homemade tomato soup and homemade bread, salad, celery with cheese and raisins on top.
friday......bean taco supremes, left overs, lemon pudding.
