cheap and easy recipe.
MEXICAN CORNBREAD:
2 pkgs Jiffy cornbread mix
1 med onion, chopped
2 cups shredded cheddar cheese
1 can cream-style corn
1 1/2 cups sour cream
4 eggs, beaten
1/2 can of tomatoes, drained
1/3 cup vegetable oil
Mix that together until it's a big gloppy mess. Pour into a greased 13x9 casserole dish, bake at 350 for 50-55 minutes.

Easy Veggie Rice Medley
Ingredients
1 Tbsp. canola oil
1 each, onion, carrot, and stalk celery, chopped
1/2 red pepper, chopped
1 can chicken broth
1 1/2 cup Minute Rice, uncooked
1 cup frozen peas
Directions
Heat oil in a skillet. Add onion, carrot, celery and pepper;
cook 5 minutes or until tender. Stir in rice and peas; cover.
Simmer 5 minutes. Remove from heat. Let stand 5 minutes before
serving.

The Ultimate Grilled Cheese (A kid's favorite!)
Ingredients
1 Tbsp. Miracle Whip
2 slices bread
2 cheese slices
Directions
Spread 1 tsp. of the dressing on 1 bread slice. Top with cheese
and remaining bread slice. Spread outside of sandwich with
remaining dressing. Cook in nonstick skillet on medium heat 4
minutes on each side or until lightly browned on both sides.

friend emailed me this one.. i have been looking in my recipe files....
Cheap and Easy Meat Loaf
1 1/2 pounds fresh ground chuck (ground up into hamburger)
1/2 pound pork breakfast sausage (fatter and cheaper the
better)
1 medium onion chopped
1/2 green bell pepper, chopped
1 celery stalk, chopped
2 cups dry bread crumbs or crushed crackers.
3 eggs
1 clove garlic put through a garlic press
4 tablespoons of watered down Worcestershire sauce
1 level teaspoon salt
1/2 teaspoon pepper
Mix all ingredients well and mold into a loaf. Place in a pan
with plenty of room. bake at 325 degrees until internal
temperature reaches 170 degrees or about an hour and 15
minutes. Now, you have a cheap, easy and good meat loaf.
buy a cheap ground chuck at least than $1.69 lb. and have it ground up for the fresh hamburger...

Easy and Quick Peanut Butter Cookies
Ingredients
1(14 oz.) can sweetened condensed milk
3/4 c peanut butter
2 cups Bisquick mix
1 tsp.vanilla
Directions
Preheat oven to 375 degrees. In large mixer bowl, beat milk and
peanut butter until smooth. Add Bisquick and vanilla; mix well.
Shape into balls. Roll in sugar. Flatten with fork. Bake for 6 to
8 minutes.

Cheesy Crockpot Hashbrowns
1 (32 ounces) package frozen hash brown potatoes (partly thawed)
2 (10 ounces) cans cheddar cheese soup, undiluted
1 (13 ounces) can evaporated milk, undiluted
1 (3 ounces) can French fried onion rings, divided
salt and pepper
Spray inside of crockpot with cooking spray.
Add potatoes, soup, milk and onion rings, reserving 1/4 cup of the onion rings.
Add salt and pepper to taste, stir to combine.
Cover and cook on Low for 7 to 9 hours or High about 3 hours.
Sprinkle reserved onion rings over top just before serving

swiss onion soup:
2 tablespoons unsalted butter
2 medium onions, thinly sliced
salt to taste
freshly ground black pepper
2 cups cubed, crusty French bread
1 teaspoon granulated sugar (optional)
2 cups chicken broth
1/4 pound Swiss or Gruyere cheese, diced
3 cups reduced-fat milk
Cooking Instructions
1. Melt the butter over moderate heat in a large heavy stockpot. Add the onions, season with salt and pepper and cook until soft but not colored, 15 minutes.
2. Cut the bread into medium dice and add it to the pot along with the sugar. Stir constantly for about 1 minute, so the bread absorbs the butter.
3. Add the chicken stock and bring to a boil. Simmer for 20 minutes. Add the cheese slowly. Reduce to a low simmer. Cook, uncovered, stirring occasionally, about 10 minutes.
4. Meanwhile heat the milk in the microwave until it is steaming. Slowly stir it into the pot. (Note: Do not let the soup boil or the cheese will separate and the milk will curdle.) Serve immediately.

Tater Tot Cassrole
1 package frozen tater tots (start baking them per package directions while cooking the rest)
2 lbs ground turkey or ground meat mix (beef, venison, pork or turkey)
1 large onion chopped
1 tbsp beef bullion + a couple tbsp water
8-16 oz shredded cheese
Start tater tots. Brown ground meat till almost no pink left. Add onions and cook till transulucent. Add bullion and water and mix well. Put meat mixture in to 9x11 or 13 cassrole dish. Sprinkle top with half of cheese, then top with tater tots. Bake in already heated (from starting tots) oven till tater tots are completely done. In last 5 min add remaining cheese, wait till bubbling to remove. Serve with a fresh salad or steamed veggies.
~ Now I used to use only ground turkey...but DBF can't stand it so I use a mix of 1/4 beef or pork and 3/4 turkey and it seems to go over well. I also make large batches of the meat then seperate and freeze for a easy supper!

easy chicken bake:
2 1/2 lb. frying chicken, cut up
1 can cream of mushroom soup
1/4 cup milk
3 oz. can mushroom pieces
1 envelope dry onion soup mix
Directions
Arrange chicken pieces in a 9x13 inch pan. In bowl, combine
remaining ingredients, mix well. Pour over chicken. Bake for 1
hour at 375 degrees F.

I have a recipe for a cheap, quick and easy beef stroganoff...or something
2 cans of cream of mushroom soup
1 lb ground beef
about 1/2 a pkg of egg noodles
1 1/2 cup of water
1. Brown the ground beef
2. Boil the egg noodles
3. Once the gorund beef is browned and strained, add both cans of the cream of mushroom soup and water. Season to taste (I usually use salt, pepper, parsley and garlic powder). Heat and stir until creamy.
4. Add egg noodles and serve
5. Enjoy!
You can add vegetables to it if you like. I usually add peas.
Makes about 4 servings

tareia, may I add something. I make mine using onc can cream of mushroom soup and one can beef broth. Then I add a bunch of sour cream. I usually make my ground beef into little meatballs and cook first. It is really good!

cheap homemade sports drink:
Ingredients:
1/4 cup sugar, 1/4 teaspoon salt, 1/4 cup hot water, 1/4 cup orange juice (if you use another juice, dilute it down, then use 1/4 cup) , 2 tablespoons lemon juice, 3 1/2 cups cold water. In a pitcher, dissolve the sugar and salt in the hot water. Add juices and remaining water; chill.
Yield: 1 quart.

homemade sweetend condensed milk:
Mix 1 stick butter, 1 c boiling water, 2 c sugar and 2 c powdered milk in a blender. mixture will be thin, but thickens as it cools. This recipe makes alot more than 1 can, but the rest can be refrigerated for 5 to 6 days, or divided into 1 c amounts and frozen.

apple crisp:
This makes a small batch for an 8x8 inch pan. Approximately 4 servings.4 medium size apples
1/2 c. water 1/2 tsp. of cinnamon 1/2 tsp. of nutmeg 1/2 tsp. of ground allspice(optional) 1/2 tsp. of ground cardamon (optional) 3/4 c. of all purpose flour 1 c. brown sugar 1/2 c. butter or baking margarine.
Peel, core and slice apples thin. Place in greased 8x8 inch square pan. Cover apples with water, cinnamon and nutmeg. Blend other ingredients until crumbly. Sprinkle over apples and bake at 350 degrees for 40-50 minutes. It is best when still a little warm and top with vanilla ice cream or cool whip topping.

Salsa Rice:
Use 2 Cups leftover rice or make rice as directed. Add 1/4 C. salsa and 1/4 C. cheese.
Variations: Add red or black beans.

Salsa Mac N Cheese:
Make mac n cheese, stir in salsa to taste. Changes the taste completely. YUMMY.
Variations: Add corn, or add beans, or add chopped sauteed bell peppers.

easy breakfast casserole:
1/2 bag of hashbrowns that contain peppers and onions
a handful of cubed ham
6 eggs, well beaten
combine all.. place in a buttered casserole pan... sprinkle lil salt, pepper and garlic...
bake at 350 degrees for 45 minutes.. let cool 5 minutes. can be served with salsa.
