Corned Beef BBQ

1 can corned beef
1 small bottle of BBQ sauce - add enough to make it BBQy, but not soupy!

Warm and serve on HB buns. Cheap, fast, easy.

Can't figure out what to do with that chicken or those leftover take out packets of duck sauce, soy sauce, and hot sauce


Chinese "Saucy" Chicken

1-2 packs of soy sauce (watch that sodium), 3 or more packs of hot sauce, 3 or more packs of duck sauce (to your taste)
Marinate chicken for at least two hours in refrigerator.

Bake, grill, stew, or fry.

Enjoy!!

You all come up with great recipes. My fav right now is to mic a potato, melt cheese and ham on top ad cover with salsa a jalapenos. I only cook for one so I get weird and creative. I figure if it doesn't come out good at least it was only me who needs to know!!

chicken breast
jar of salsa
rice to strech it
throw chicken or pork chop and salsa in a crockpot and cook on low for 8 hours.. serve over rice.. you can tear meat apart or serve whole...

Cheesy Chili Mac

1 box of macaroni and cheese (cook as directed) I use Save-a-lot Cheese and shells
1 pound ground beef - cooked and drained
1 can chopped tomatoes or tomato sauce
Chili powder to desired taste

Mix all together and enjoy!!

I love this and so do my kids - i always serve with cornbread

Ramen Mushroom soup:

Set aside ramen spice packet
make ramen according to directions
drain
in same pan add 2 tbsp butter + 1 tbsp crushed garlic
brown garlic a bit and add one small can mushroom pieces that have been drained
add ramen spice packet and mix well
add 1 can cream of mushroom soup + 1/2 can of water
add noddles back in and heat thouroughly

Really Great Chicken

Chicken (still on the bones)
Veggies (we like potatoes, carrots and onions)
some kind of soup mix (Lipton's or Campbell)


Cut up your veggies and put them in the bottom of a casserole dish over a little butter spread out first. Spread out chicken on top of veggies. Mix up the soup mix and pour over both chicken and veggies. Cook on 375 for about one hour or until chicken is done.

About 10 minutes before chicken is done, put salt, pepper and a little paprika on top of the chicken. I have not met anyone who does not love this dinner

Stir Fry

Rice of choice
veggies (green beans, carrots, onions, or any kind of peppers)
One large sausage (one of those big beef circulars)

cook rice for 20 minutes
while the rice is cooking, saute the veggies and the beef

serve veggies and beef sausage over hot rice. Makes a quick and colorful meal. And it is very filling, great to feed hungry men.

Corned beef is always good for a cheap subsititute for mincemeat I find. You can use for spag bol or alternatively one of my favourite recipes is it cooked up with some carrots and an onion then topped with mashed potato or i prefer mashed sweet potato then baked in the oven for 30 minutes or so. Its cheap, healthy with the sweet potato option, tastes good and lasts in the fridge for a while. I tend to serve on its own or with veg and gravy.
