Another idea is you want single serve portions to make lasagna rolls,--basically you just cook the noodles, spoon fillng on individual noodles and roll. Google 'lasagna rolls" for better directions.

All of these suggestions sound great. Now I am a little dense.....Doesn't it get really messy trying to roll the noodles?

It's not too bad... but don't go overboard with the filling. You can roll and cook noodle ruffle side up or seam down. Seam down is less messy.

Hmm... I have a bamboo mat for rolling sushi ... I am thinking that would work pretty well for lasagne rolls.....
