Re: Lentil and Noodle soup.
Here's a lentil stew that I made last night:
1/2 onion, chopped
2-3 cloves garlic, minced
olive oil - enough for sauteeing garlic, onion and vegetables
3-4 carrots, chopped fairly small
3 celery stalks, chopped fairly small
1 cup lentils
2 vegetable boullion cubes
2 1/2 c. hot water
1 cup chopped tomatoes w/juices
1 bay leaf
Saute garlic in large pot in olive oil, then add onions and saute. Add carrots and celery and saute till somewhat soft. Add everything else (dissolving boullion in hot water first). Bring to a gentle boil, then reduce heat and simmer 1-2 hours - check lentils for doneness.
You can add salt and pepper, and my mom says she has a similar recipe and has used half lentils, half split peas. I used regular lentils, but the friend who gave me the recipe uses the green lentils. You could also use chicken broth.
