Lightbulb Tortilla's

my dtr loves flour tortillas so I thought, gee, they can't be that hard to make. Sure enough it is so easy and CHEAP.

3 cups flour
1 tsp salt
1/3 c oil (I suggest olive - extra virgin for health reasons)
1 c warm water but not boiling

Combine 1st three until crumbly, add H2O til can ball. On floured surface knead for 5 minutes. cover and leave for 30 min to 2 hours. Divide to 12 balls and roll out. Heat skillet to very hot, fry 30 sec each side. Can store for 3 days.

For the kiddies:

Flour tortillas
1c sugar
2 tsp cinnamon
oil for frying (again olive)

cut tortilla to 4 strips, cut slit down center, bring one end through and twist. Heat in oil until golden brown. Drain on paper towel (a sin - perhaps someone has a cheap suggestion intead of paper towels). coat with cinnamon sugar combo. Serve chilled.

Looking for all kinds of very very cheap things to make and eat. I must get my grocery budget down. Waiting for Mom-in-Missouri to fess up, please list your grocery list. School tuition has gone up 10% and I must complete the program. Help

Made the tortilla's yesterday. They were easy to make. They are good to eat! Now the dtr wants flour, spouse (Mexican heritage) wants corn (spouse must be from the south of Mexico, this is where the corn tortilla's are from, the north Mexico uses flour - child is American Mexican so maybe why she likes the flour). So I found the Maiz and will make corn next. Here is another dish with this easy recipe: Cream cheese with bacon bits rolled in the flour tortilla. Will try that on Tuesday.

I love scrambled eggs and cheese rolled in a blue corn tortilla for breakfast (when I can find the blue corn tortillas, usually from northern Arizona in Navajo territory).

Nice! I've been buying tortillas at the store, but I bet these are healthier -- do you think whole grain flour would still be good?
