Does anyone have a good way to make french fries from a potato, with the oven instead of oil?

I simply make what we call here at home 'Oven Baked Fries', by slicing potatoes lengthwise into wedges (peeling is optional -- I prefer to scrub well and not peel, so to keep the nutrition and fiber) and baking them in the oven on oiled cookie sheets, turning them and baking some more so they brown well and crisp up on both sides. Pretty delicious actually....

We do a simalar thing with our homemade french fries as well. I do put them in the microwave for about 10 minutes after they are sliced and then broil them for 25-30 minutes after.

err ok so I am buying potatoes tonight, and I realized I have no idea what temperature to use?
broiling, I hope that doesn't mean over 400, my oven smokes and is a bad thing over 400. |

I tried it at 400 last week and it truned out really good, except for the super skinny ones I burnt
but I figure if I can learn to cut straighter I will be good to go. |

This recipe is from Kraft Foods:
UN-FRIED FRENCH FRIES Serves 6 2 or 3 medium potatoes 1/4 cup Italian Dressing (they suggest Reduced Fat) 1/4 cup Parmesan Chesse (they suggest Reduced Fat) PREHEAT oven to 425, wash potaotoes and pat dry with paper towels. Cut into 1/4 inch strips; transfer to large bowl. Add dressing and cheese; toss well. ARRANGE potatoes in single layer on baking sheet (may need two baking sheets) sprayed with cooking spray. Spray potatoes with cooking spray. BAKE 12 minutes. Turn potatoes over and continue baking 10 to 12 more minutes until golden brown. ENJOY! |

You can also use a seasoning salt on the fries. But in order to get the seasonings to stick, you need oil. The best way is to lightly spray them with Pam & the sprinkle on the seasonings. That way they stay low-cal.
