I bought some tortelli in a BOGO. I am going to make that, salad, and some bread. What is on your menu today?

A former coworker gave me a lot of frozen salmon that he had caught himself.
I'm cooking a huge salmon steak today.
I'll use half of it for a salmon and pesto pasta (gluten-free pasta) for tonight. With the rest of the salmon I'm going to make salmon patties from a recipe on one of the savingadvice blogs.

ACtually whole wheat pancakes are on the menu..with strawberries, and blueberries, maply syrup and whipped topping.

Since I either have to come up with a take out plan which our budget isn't at all friendly to or cook every night it has become a chore. Sad but true.
I think tonight it is healthy nite Kind of! LOL
Smoked sasuage and bell peppers and onions with cabbage and side salad. Differant for us but the sasuage and cabbage was on sale so that is normallty what goes on the table one way or the other

basmati rice (frozen from a previous batch) + 1 can of organic black beans (time to stock up!) + 1 package of all beef kielbasa (on sale) = full tummy and left overs!!! i was gonna add a salad too, but was chilly and didn't want to eat something cold

I made the above-mentioned salmon patties today and they were excellent!
I've pulled a batch of tortilla soup out of the freezer for dinner tonight.
(I love eating out of the freezer).

We bought a bulk package of sausage earlier this week - two meals from it and another package for the freezer. Tonight we had sausage and pepper sandwiches, corn (frozen from my parent's crop), and tater tots (wanted to use up a partial bag from the freezer).

CashHappySon has his girl over tonight and they are cooking dinner (she desperately needs to learn) - on the menu is fettucini, buttermilk-garlic toast, salad, green beans w/new potatoes and a day old bakery dessert served w/strawberries & coolwhip, iced tea. He's teaching her, not me.

Do you do a Sunday dinner? Usually on Sat we just eat what's leftover or get takeout. I am hungry for steak so I think I will splurge on a couple steaks this weekend, bake potatoes, and some broccoli (i'm the only one who will eat that).
I also have a pack of ground turkey in the freezer. I am not sure what to do with that but would like to use it this week.

perhaps you could make meatballs with your ground turkey? if you have a pack of sausage you can add that to the turkey before making the meatballs, it adds a little fat so they cook easier, plus it's a nice zippy flavor...

For dinner, I made chicken burgers.

- ground chicken
- 1 onion, diced
- garlic
- brown rice
- FF sour cream, or FF plain yogurt
- garlic powder, minced dry onion, salt

Mix together, drizzle pan with olive oil, cook.

YUMMY! And lots of left-overs.

JanH - I just use ground turkey as a straight across hamburger substitute and use it for anything I'd use HB for - spaghetti, tacos, casseroles, chili, etc.

Today I made my own version of fried rice. I used up some left over pork from Sunday that came out a little too dry, rice (obviously), 1 egg, a capful of sesame seeds and minced onions, canola oil, soy sauce and some left over duck sauce from the last time we had chinese take out.

It came out very good. I will definately make this again when I need to use up leftover pork, chicken or beef!

I'm going to do an experiment today while I'm home alone: Salmon croquets made not with flour or crumbs, but with milled flaxseed. The flaxseed is not a lowcost item, but I try to keep carbohydrates down and flaxseed cooks up with a consistency similar to coarse whole wheat flour. I use canned salmon for croquets. I'll go ahead and cook up the whole can's worth and put away the leftovers in the fridge to eat over the next several days. I don't mind eating leftovers for several meals in a row, including breakfast....Hope I have enough onions. I'm not going to the store--it's too cold to go out!

something else that might make good salmon patties: TSP (texturized soy protein); you can get it at most health food stores. it's a bit on the pricey side, but is low in carbs and high in soy protein. works well as a thickener/binder instead of flour or cornstarch.

other options: brown rice and mashed beans

Mom cooked a huge turkey yesterday so we'll still eat some of her left overs today. But I did cook Sunday - we had pork and rice, and veggie burritos - put cream corn on a warm soft tortilla, spread shredded cabbage & carrots over it, cover with some shredded cheese, and top with salsa. Fold like a burrito and eat.. ..
