tonight we are having a tomato based vegetable bake stew type thing over cous cous.
ingredients:
broccoli, beans, pumpkin, zucchini, 1 can tinned tomatoes
cumin, turmeric, ceyenne pepper, mixed herbs, cous cous.
diced lamb for DF.

and tomorrow I am going to attempt to make a tuna pasta type thing, with 1 tin tuna, pasta, sauteed snowpeas, green beans, capsicum and onion.

has anyone made a tuna pasta type thing WITHOUT cream? did it turn out alright? I just don't think it's neccesary to add cream to dinners, i try to keep our meals pretty healthy, so was wondering if anyone knows if it will turn out alright.

i'm going to attempt a new recipe: vegetable spiced rice (eggplant, sweet potato, pumpkin, chickpeas with cumin, coriander, ceyenne, parsley etc)

A vegetarian deep-dish pot pie, and leftover mashed potatoes on the side. (I think I'll leave the potatoes out of the pie; there will be plenty of other ingredients.)

Friday is 'leftover'day and since the fridge holds only small quantities of many items, I can make Chicken pot pie which actually is a family favorite. It's really dreary here today so if there are enough bits left when pies are assembled, I will make lentil soup.

i think i will make pumpkin and coriander soup tonight, but also add in a couple of potatos, a sweet potato and some carrots. once i blend it up you won't be able to notice the difference, and then i can freeze two servings for another night.

Tonight we ate frozen leftovers but tomorow I am making some meat macarori with veggies and cheese. My son is almost 2 and is fussy on veggies so I trow any leftover veggies in the food processor and mix it in with the tomato soup. He loves it!

Recipe that was tagged to the asparagus. It's kind of weird. Honey soy stir-fry, except I'm going to just steam it and leave off the cornstarch based sauce and omit the pork. It uses the asparagus, garlic, ginger, pineapple (!), soy sauce, and honey. It's supposed to be served with rice, but I'll skip that tonight.

breakfast was eggs, but DH also brought home donuts on his way from work (he does that about once a month). lunch--everyone ws on their own for leftovers.
supper will be sloppy joes from our own beef, and I am making the buns. I will cut up and fry some potatoes to go with it--family can decide if they want french fries fried or oven baked, or hashbrowns, and probably applesauce and greenbeans. All is from our farm--down to the nitty gritty in the deepfreeze upstairs on last years produce.
