I'm putting a whole chicken in the Crockpot...

I'll get two meals out of it...chicken and dressing casserole (take chicken off of bones, put half of it in casserole dish with celery, dry dressing, can of cream of chicken soup, and some broth, bake for 30 minutes) and chicken stew for later on in the week. I'm also going to put ingredients for bread in the bread machine.

Free dinner tonight. Our church youth group had a soup dinner Sunday, and sent all the leftovers home with me. The person who provided all the soup started out the new year on a diet, and didn't want to break it by taking it home and eating it!
So, tortilla soup, chips, and french bread.

Chicken pot pie and wine-braised red cabbage. Silly me was wondering why the pot pie was taking so long to cook when I noticed that I'd turned the oven off. Ah, well, the cabbage needs to cook longer any way. This is a very inexpensive meal to prepare.

Chicken Adobo! It's been years since I've had it last (and I've never made it myself), so I'm really hoping I don't screw it up... hahaha

It's actually for dinner tomorrow, but I'm doing it in the crock-pot.... cook it low and slow. This should be AWESOME.

Does anyone else do 'plan-over' meals? Yesterday's simmering [chuck] roast didn't shrink now that I bake 4 hrs., @ 250F. Tonight with a bit of fresh veg. it will reappear as Beef Wellington by adding a mushroom sauce and a cover of fz. puff pastry.

The remainder has been sliced or cubed, bagged and frozen to reappear once a week as Stroganoff, Mexicali Casserole, Creamed, Chipped Beef, Canton Crunch followed by Spanish rice to use excess rice. The next cold day the bits and pieces, overdone edges etc. will be added to PHO - the Vietnam staple soup.

We have been eating healthier with the meat portion equalling the size of your palm, double the veggies and adding either soup or salad at dinner.

Yeah, I do lots of "plan-overs" though I never thought to call them that.
Frequently I'll do a big roast or turkey breast and doctor up the leavings.
My mom used a book in the old days called, "I Hate to Cookbook" which was pretty funny and had lots of various takes on bits and pieces of things.

Soup and sometimes pasta or casseroles are the way our bits and pieces get used up.

We do what you call "plan over" meals as well. Cook a whole chicken and get two or three meals out of it. Fix a pot roast and then use the leftover beef for beef and noodles (with the leftover broth). Smart cooking!
