tinap, I'm a JIFFY queen!! Love me'some good ol' Jiffy cornbread! I've bought the cake & frosting mixes for years as aids to the boys learning to cook - if they screwed them up in the beginning, no big loss & they are about the right size and price for my lil' family.

I wrote the company once and they sent me a very nice cookbook. Chelsea Milling is a great company w/a big heart! Yeah JIFFY! How can you not love a company who's president is named Howdy!!!???!!!

yay, another jiffy lover!!!!

as i have no oven right now (and even when i do we do VERY LITTLE baking) jiffy mixes actually come out more cost effective for my household. could i buy the ingredients and make the mix myself? sure. would i use it all before it started to get wonky or run the risk of bugs? nope, i've still got a bag of flour from 2 years ago...

13 lbs of ground beef

found it on sale (couldn't pass it up). So some gets fried with salt/pepper/onion. Some gets fried up as taco meat, two small meatloafs and the rest will probably be made into hamburgers.

I bag it and freeze it in usable size portions.

trillium, sounds like a smart deal.

tinap, are you saving up for a special oven? other goals have priority or just avoiding having one so you don't have to bake? Have you requested one on freecycle?

lux, the house we bought has a space for a very small built in oven (the space is i think 24 inches wide, the kitchen is from the mid 60s). there was no oven when we bought b/c of an oven fire when the place was last rented out. i've never been much of an oven gal anyways, have always been a stovetop, microwave, and grill cooker, so there was no real rush to find and install the oven. with the toaster oven i got for christmas, i can make my jiffy cakes and not even notice i don't have an oven.

plus, we can't decide if we want to stick with the current setup (dropin cook top which we bought for $50 and separate oven) or if we want a traditional range. the second option will require some pretty massive cabinet cutting and rewiring and i'm not sure that we feel up to it

A wonderful super easy macaroni ham salad my SIL made this weekend---so fast and easy

Angela's Macaroni and ham salad

cook 1 box small shells macaroni, drain and cool. Cut up 2 slices of ham into small pieces, add one can of mixed vegetables. Sprinkle lightly with garlic salt. combine 1 cup of ranch dressing and one cup of crema fresca (sour cream) and mix with the rest of the ingredients.

This is so yummy, I can hardly wait to make it tonight!

Today I mixed some cooked ground turkey with taco seasoning and salsa and can of corn in a casserole dish. I topped it with some cheddar cheese and jiffy cornbread mix then baked it until the corn bread was done. YUM!!!!!

I have some leftover chicken so I am making chicken enchiladas. Salsa, cheese and chicken - put in flour tortilla. Roll and top with more salsa and cheese, then bake. I am going to also make some chicken quesidillas because my boys like them. Just chicken and cheese in a tortilla.

I did a copy cat of thanksgiving. 13 Pound turkey, stuffing, mashed potatoes, the works. Figure it'll save some money, can make sandwiches to take for lunch and eat turkey during the day.

made big pot of vegetable soup, using liquid from veggies i had previously frozen. used beef bouillon and bit of kitchen boquet to flavor it. added part of bag of frozen veggies. added bit of macroni to thicken it. had with mexican cornbread i had frozen. made enough soup for about 5 additional meals and froze it. had gingersnaps for dessert. bought them to make strogeneuff from leftover roast.

I am thawing out chicken cutlets and will saute them, add a can of seasoned tomatoes of basil, onion, and oregano and top it with cheese to be melted. I will also have rice pilaf, a salad, and water.

I got lamb, ground beef, steak, hens, cheese, milk, chicken nuggets, and a lemon pie. The best part was I only spent $40. This should last me all week.
