Fiesta Chicken and Rice

1-1/2 cups shredded chicken (from whole chicken cooked on Sunday)
3/4 cup uncooked rice
1 can Cream of Chicken Soup
1 can corn
1/2 cup salsa
1/2 cup water
Top with cheddar cheese and parsley

Bake 375º until bubbly and the rice is tender. (about 45 minutes)

I made some lumpia (filipino eggrolls) last night. They came out VERY tasty. I cooked up about 4 of them and froze the rest individually. You can't really pre-fry them and expect them to taste good, but if you freeze them fresh and fry them before you eat them....yummy.

Mine (except for the frying ) were pretty healthy: zuchinni, purple potatoes, bean sprouts, cabbage, green onions, fresh ginger and garlic. All with just a touch of spicy sausage to pretend that there was more meat in them than there was.

basmati rice, cooked in with the juice from 2 cans of rotele
guacamole, made with avocadoes and 2 spoonfuls of the rotele
canned organic black beans, extra garlic and onion
leftover grilled chicken chunks from the freezer
1 lb of frozen corn

topped with sour cream and shredded cheese left over from superbowl chili

finished off with toaster oven brownies with chocolate chips and walnuts

i'm about ready to pop!

strip steaks, potatoes fried with onions, peas, and some lovely smelling chocolate concoction for dessert that I got from my chocolate cookbook. I also had some leftover chocolate in the fridge from a fondue type thing I did a fews month ago, so I melted it in the microwave and dipped away - strawberries, potato chips, pretzels, and Rice krispie treats. Yum!

zip, zilch, nada, nothing!!!

tonight was the traditional heart-shaped meatloaf at my parents' house. it's a 20+ year tradition that has withstood countless boyfriends and 3 husbands between my sister and i.

on the way out the door, my mother gave DH and i our 'personal meatloaf' nestled in a cloud of homemade mashed potatoes. enough for nibbling and a good batch of sandwiches, she said. to give you an idea, the personal size is about a 2lb heart shaped loaf. the regular? this year i think was 6...

Shrimp Scampi served over linguine, Steamed Asparagua, mixed salad, rolls, chocolate butter cream cake, Champagne. That was for Valentines Day.

Hubby gone today so, I will eat left overs.

Yes, I use chicken in it there are several good recipes for it on http://allrecipes.com/Default.aspx I vary it depending on what I have on hand, sometimes I make it vegetarian if we have friends coming who don't eat meat. It is excellent and makes a lot.

Tonight's menu: Chili, leftover cesar salad and some kind of pudding

Today I am making Philly Cheesesteaks. They have a BOGO on the minute steak ums. I use those and get my double burner pancake skillet out. Then, i toss them on with green and red pepper, season, and put on the cheese to get it ooey-gooey. And, put on some good rolls with mayo. Yum. My son likes to help me cook these. We pretend we are the Iron Chefs.

Stuffed peppers - needed to get rid of some hamburger and peppers that were getting too old. I also used up half a jar of spaghetti sauce for the peppers.

This weekend I made spagetti and sauce. At 2-4lbs/$1 spagetti and $0.99 for a jar of sauce (doctored and simmered of course) this is one of the most frugal meals out there.
Served with a can of green beans and some buttered italian bread.

For breakfast Saturday morning I made a box of jiffy corn muffins that cost 3/$1.

sorry, was that too loud? seriously, jiffy is just great all around. the corn muffin mix is quite tasty and makes more than muffins: cornbread (aka johnny cake) and cornbread fritters are some of our favorites. their website has all kinds of recipes for all of their mixes, and at 40-50 cents a box it's easy to come out ahead.
