I was lazy again, we had potatoes with cheese and veggie. REally I fully intend to cook tomorrow, fried eggs....

1.5 lb pork tenderloin ($3 at food auction) and instant mashed potatoes (from the depths of the pantry!)... reminded me just how much i hate instant mashed potatoes!
luckily, tomorrow starts my new budget month. and it's sales paper day, too. woohoo! |

Bubble N' Squeak - Made w/leftover frozen Christmas ham, potatoes, onion, garlic & shopped cabbage, lots of bacon grease! Myy my my - a heart attack waiting to happen! EEK!
...But T.A.S.T.Y. And good hearty ice-y winter fare. In a large soup pot w/lid I start w/the bacon grease, onion & garlic, toss in thinly sliced potatoes - almost the fry point - you know when they loose their whiteness but haven't started yet to brown, then add the ham and cabbage last, season w/salt & season all. Throw on a lid or tight foil so the cabbage is steamed. Do not leave the area, but every 3-4 minutes lift the lid and stir the pot so things don't get blackened on the bottom. Your potatoes will be somewhat mooshy when this is done right. It's done when cabbage has gone limp. Strangely when I pull up bubbleN'squeak on the internet it tells me this is an English dish done w/roast beef, but I learned it from Hubster's grandmother - as an 'old school' Pennsylvania Dutch recipe. This is the only way I can eat cabbage and there really isn't that horridly icky smell you get w/cabbage when you boil it. ICCCCK & EWWW!! I was told by a 'waterless cookware' salesman once that it was the chem reaction w/water that makes cabbage stink and to quit washing my cabbage right before cooking it. Wash it first, like early in the day, let it dry all day and then cook it. Dunno, but this way it doesn't stink like you remember when your Mom used to cook it and I wash the cabbage right before chopping it. Anyway, cabbage and potatoes are inexpensive foodstuffs, so when there is leftover ham (not often), out comes this meal. You won't find this recipe in your Weight Watcher's program, okay? Okay. There are calories here people - this was common fare for hardworking farm people. So, if you are taking the weight challenge here seriously do not try this at home unless you are a fanatic saint who can tightly control your portions. |

Heh, bubbleN squeak is an oddname for many foods,wehadit the other night..pastaand tomato sauce and cheese poppedin the oven (the cheese does bubble and squeak...
Tonight we had a wonderful creamy concoction over pasta with green beans...I know what happened to the eggs...tomorrow, I promised the kids. |

I am trying to make this recipe for porkchops that I got online. I am thinking now that I may have not done it right. If so then at least I learned something. LOL I have really been trying to learn to cook over the last month. Here is what I am attempting to make:

Hub had fried eggs and fried treet (had two teeth pulled this morning) I had bowl of beans (cooked today) DD1 had pkg of lipton cheddar/broccoli noodles DD2 wanted a sandwich

chicken noodle soup
Skin and boil one whole chicken. Let cool, remove fat and bones. Save brooth. Add chicken peices to brooth. Add in; 5 cubes of chicken boulion noodles or rice (precooked) finely chopped carrots finely chopped onion 1 can corn salt pepper |

Lunch today was white beans w/ham chunks. ~YUM~ and warm for the innards! Pretty simple -- beans out of the cans, ham from the freezer, add some onion & garlic, salt & seasoning, a dash of white vinegar, and ~~ta-da~~ a fast & lazy lunch for the cook who is busy trying to stay warm! Lazy lazy cook did not even fix cornbread, just served w/crackers & bread and butter for those that wanted something else.

I'm just making a sandwich and finishing up some frozen curly fries. I went home this weekend, and mom stocked me up pretty well with chicken and leftovers from our weekend meals. I think I should be good for the week!

Last night was spaghetti which was surprisingly extra good. Ya know - you make it the same way 100 times and on the 101st it is just lip-laripin' good and you know you didn't do anything different? That's how it was - there aren't any leftovers for today which is how I usually get my lunch.
For supper??? I don't know but tortilla soup does sound good...think I'll go rummage the pantry for the fixins! Thanks fairy74! |
