Start with healthy staples (Rice, Beans, Lentils) as your base and add in from there. You don't have to eat them plain. For example, I like to take leftover rice, mix in a little tomato-based pasta sauce (add other veggies and/or a tiny bit of meat or fish if you like), sprinkle with a little parmesan cheese, pop in the microwave, and presto I have a cheap, easy, and healthy meal.

Most of my staples are "cheap" foods:

Oatmeal - great as cereal, in muffins, cookies, breads. Eggs - high quality protein at bargain basement price. Pasta, rice and beans - extremely versatile.

Cabbage - for coleslaw, or sauteed (yum), or made into cabbage rolls with rice filling. Squash - good for vegetables, soup, pies *and* desserts (same with yams, sweet potatoes and carrots). Potatoes (again very versatile). Onions.

Bananas and apples.

Whole grain flour - for breads, muffins, etc.

All good stuff, but now I'm hungry.

I love rice, I could eat a big bowl of that and nothing else. Mac and cheese fills me up too.

Soup - made from leftover veggies - toss in some barley or rice. Eat the soup first, then you are not as hungry for other 'stuff'.
