Default An Odd One, but Frugal

I had an amazing dish last night, based on a recipe that's served at St. John's in London. The chef, Fergus Henderson, wrote The Whole Beast, Nose to Tail Eating. The title kinda says it all. He's about the food, but I think frugality is there too-why waste the tail or spleen? Unless you're a vegetarian, of course.

I had Roast Bone Marrow with Parsley Salad. My friend got the bones from the butcher for free. Butcher said he'd do it for anyone. He got cow bones instead of veal, but it still tasted fine.

St. John's Roast Bone Marrow with Parsley Salad

It's a simple yet fancy pants dish. It'd be a good first course or appetizer on a special occasion, and it wouldn't take a lot of time. The bone marrow was suprisingly rich and indulgent. I really get a kick out of something so mighty fine being free, because it's considered waste.

Total of 9 ingredients: simple. I think onion could substitute for shallot. And I priced capers online-you could get a handful for 20 cents (16 fluid oz equals 32 tablespoons, $2.99/32=9 cents a tablespoon).

Ugg. I admire your willingness to try this but i guess i'm a product of my upbringing. Sometimes i'm disgusted by the chicken feet and other unmentionable body parts i see in the butcher's freezer section.

You'd be able to tell.....the big pieces of bones would be a giveaway.......

It's a little out there, I agree. But for those of us who love organ meat and pate and that type of stuff, it is a fun almost free dish.

I can't do exotic stuff....for some reason my tummy turns over pretty much anything other than chicken breast, steak, roast, ribs, ham, bacon and pork. (no fish, no wild game, no insects or other oddities and no organ meat for me)

I guess I am a wuss...but I honestly cant do it. (Really prefer not to even think about it...definately cant watch those 'fear factor' type shows...) ugh.

Ray, you are just like me, I can only eat plain foods. I have to know what is in anything before I can touch it. Usually, I just skip the eating at parties unless my husband says I would like it.

Isn't roasted bone marrrow used to make soup? I don't know how to do it, but I imagine there are directions for it in a tradtional cookbook such as the old Joy of Cooking. I think it is suppoded to give the soup an appetizing color besides flavor.

thanks for posting the info... i was a vegetarian for 19 yrs... just 3 weeks ago, we have returned (me and spouse) to eating seafood... our md, and friend wants us to stock up on the omega3 in fish at least one meal a week... so, we have been eating fish, shrimp..... sat.. we go to red lobster for what else lobster........our test results were excellent... md just wants us to obtain the oils naturally, not thru the omega3 pill.... we used to take codliver oil pills once in a while.... md only wants us to take omega3 pills when and if we develop any problems.... my brother has heart problems and my spouses dad died at 56 from a massive one time heart attack, and he was a huge red meat eater....
