Default Grapefruit overload

Okay, we love grapefruit, but this may be too much. We have a tree and dh just brought home a big bag of grapefruit.

Any ideas for preserving them? We're talking enough that if we each eat 1/day we still won't finish them before they start to spoil.

We haven't picked all the ones off the tree yet, but we will need to soon, it's flowering now.

Marmalade for Christmas presents, juice to get through them.
I wonder if you could make sherbet out them.
Then there's always what we used to call a "greyhound", vodka and grapefruit juice.

This is when it sucks to be on South Beach. Juice isn't allowed. There isn't enough fiber in juice so you end up getting a major sugar spike (and these are sweet grapefruit).

I might try freezing peeled slices. I did that with oranges last year (well, not peeled, but sectioned). Oranges are really good frozen (we ate them frozen).

I looked at a couple of salad recipes that call for orange sections. Perhaps you could substitute grapefruit sections for the orange sections.

Can you barter your grapefruit?

Here's the orange section salad that I was looking at. It came from a flyer at the grocery store. I haven't tried it even with the oranges, so YMMV. Maybe grapefruit can substitute.

Easy and Delicious Orange Salad

Salad itself:
4-5 navel oranges - peeled and pith removed
1/4 small red onion - thinly sliced
1/4 c - 1/3 c sliced almond - lightly toasted
salad spinach/ baby greens - 12 to 16 oz - washed, drained

Vinaigrette:
3 tbsp champagne wine vinegar (so much for the frugal part)
1 tbsp honey
juice from oranges (various, depending on what you get)
olive oil 1/3 - 1/2 c
salt and pepper to taste

Peel and remove inner membrane of oranges. Catch any juice in a bowl to use for the vinaigrette. Slice red onion, mix with orange segments. Toast sliced almonds.

Make the vinaigrette - combine honey, vinegar, orange juice, salt, & pepper. Slowly whisk in olive oil until well combined.

To serve - toss orange sections and onion slices with the spinach and dressing. Sprinkle with almonds.
