Default Save those tomato scraps!

Hi,

this is a great way to save money. Hubby has sliced tomatoes in his sandwiches for work every day and I used to throw out the cores and end slices, which we hate. One day I realised what a lot of cash I was throwing in the bin. I now save them, plus the cores from tinned tomatoes until I have enough to fill a large pot. I let them simmer fro 20-30 minutes and then sieve them. The result is lovely thick juice which can be used for soups, stews, curries etc... I haven't tried it, but maybe in a bloody Mary too?

Our dogs won't touch them, but one will eat banana and we used to have a dog who ate raw carrot, potato and peppers and he loved grapes and banana too!

Back to tomatoes - here's a quick recipe:

Red Soup

4 cups tomato juice
1 red pepper, de-seeded and chopped
1/3 cup red lentils, rinsed
salt
paprika, cayenne or any spice of your chioce

simply pop them all into a large saucepan, bring to the boil and simmer for about 30 mins, stirring now and then until lentils are mushy. Check the seasonings and eat as is or blend and serve - maybe with a dollop of sour cream.

You could also serve the soup cold if you wish.

Back again!

I'm not quite awake yet! Sorry, I forgot to say that the flavours meld together better if you leave the soup for a day before eating and that you can add a sauteed onion and a clove of garlic if you prefer a more robust flavour.

It's great to save everything. Not only does that make excellent soup, it also is a good base for a swiss steak sauce or mixed with cheesy bean (baked beans with cheese).
